Chunky tomato relish
Add colour and flavour to meals with this easy-to-make chunky tomato relish. It’s a great idea to make a big batch and then you can bottle it up and give it to loved ones as a gift.
Ingredients:
- 1 tablespoon olive oil
- 1 small brown onion, finely chopped
- 2 garlic cloves, crushed
- 1 small fresh red chilli, halved, deseeded, finely chopped
- 500g ripe vine-ripened tomatoes, coarsely chopped
- 2 tablespoons brown sugar
- 2 tablespoons white wine vinegar
Method:
1. Heat the oil in a medium saucepan over medium-low heat. Add the onion and cook, stirring often, for five minutes or until soft.
2. Add the garlic and chilli, and cook, stirring, for two minutes or until aromatic.
3. Add the tomato to the onion mixture and cook, stirring occasionally, for five minutes or until the tomato breaks down.
4. Lastly, add the sugar and vinegar, and cook for 10 minutes or until the mixture thickens. Set aside to cool. Voila you have a beautiful relish that will up the ante come meal time.
