Bacon wrapped asparagus bundles
These bundles of joy are bursting with flavour and make a great side accompaniment to any main.
Serves: Four
Ingredients:
- 4 cloves garlic, minced
- 500g asparagus, ends trimmed
- 4 slices of bacon
- ¼ cup olive oil
- 1 tablespoon of chopped fresh parsley
- Salt and pepper to season
Methods:
1. Preheat oven at 200°C.
2. Sauté garlic and parsley over low heat in oiled pan. Set aside.
3. Divide asparagus into four bundles and place each bundle at centre of each bacon strip. Season with salt and pepper.
4. Drizzle pan mixture over each bundle.
5. Wrap bacon around asparagus and secure with toothpicks.
6. Bake in oven for 20 minutes or until bacon is crisp and asparagus tender.
