Mixed berry clafoutis
In case you didn’t know, a clafoutis is a baked French dessert that calls for berries to be arranged in a greased baking dish and covered with a thick batter. And if that description didn’t sell you, take our word for it, this clafoutis is delicious. Enjoy our mixed berry variation – but use your favourite berries.
Ingredients:
- 150g raspberries
- 150g blueberries
- 1 tablespoon brandy
- 1/2 cup caster sugar
- 1/2 cup plain flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 3 large free range eggs
- ½ teaspoons vanilla extract
- 250ml pouring cream
Method:
- Preheat your oven to 180°C, and lightly grease a baking dish.
- In a large bowl, mix your berries with the brandy and leave aside.
- Sift the flour into a large bowl, and stir in the sugar, salt, and baking powder.
- In a separate bowl, whisk together the eggs, cream, and vanilla extract. Slowly add the cream mixture to the flour mixture and stir until it forms a smooth batter.
- Arrange the brandied fruit in the baking dish and slowly pour the batter over the top, ensuring the berries are evenly distributed.
- Bake for 35 minutes until the clafoutis is puffed and lightly golden brown. Remove from the oven, top with extra fresh berries, and dust with a little icing sugar.
- Serve with a dollop of whipped cream, or a little ice cream.
