Carrot and sweet potato mash
While we’ll always have a place for traditional mashed potatoes in our hearts, this carrot and sweet potato mash adds a touch of sweetness and colour to our plates that we love.
Serves: Four
Ingredients:
- 25g butter
- 500g carrots, chopped
- 500g sweet potatoes, chopped
- 3 garlic cloves, crushed
- ¼ cup whipping cream
- Salt and pepper
Method:
1. Place carrots, sweet potatoes and garlic in large pot of boiling salted water. Cook for 12 minutes or until tender. Drain well and return vegetables to same pot.
2. Mash with potato masher. Add cream and butter. Mash until smooth and creamy. Season with salt and pepper.
