Cauliflower cheese bake
This classic side dish is sure to impress and might even steal the thunder to become a favourite main.
Ingredients:
- 1 large cauliflower, cut into florets
- 1 cup of milk
- 5 tablespoon flour
- 50g butter
- 1 tablespoon of Dijon mustard
- 1 cup strong cheddar cheese, grated
- ¼ cup fine dry bread crumbs
- Salt and pepper to season
- Dill to garnish
Method:
1. Preheat oven to 200 degrees
2. Bring a saucepan of salted water to boil and add cauliflower. Cook for 10 minutes or until tender. Drain, and set aside.
3. Melt butter in pan and stir in flour. Cook on gentle heat for two minutes. Whisk in milk and bring to boil. Add mustard, most of the breadcrumbs and cheese. Stir until sauce has thickened. Season with salt and pepper.
5. Tip cauliflower into overproof pan and pour sauce over it. Sprinkle remaining cheese and breadcrumbs.
6. Bake for 25 minutes or until puffed and golden. Garnish with dill if desired.
