Mini cheddar cheese and bacon pies
These mini cheddar cheese and bacon pies are perfect finger food for the next time you’re entertaining.
Ingredients:
- 20g butter
- 1 onion, finely diced
- 200g short cut bacon, diced
- 3 large eggs
- 2 tablespoons creme fraiche
- 3 cherry tomatoes, finely diced
- 50g cheddar cheese, grated
- 1 tablespoon chives, finely chopped
- Puff pastry
Method:
- Preheat your oven to 180°C.
- In a saucepan over medium heat, fry the onions in the butter for 10 minutes until soft and golden.
- Set the onions aside on a plate and use the frying pan to cook the bacon until lightly golden. Add the onions back to the fry pan and cook for a further five minutes, stirring continuously. Remove the frying pan from the heat.
- In a bowl, combine the onion and bacon mix with the eggs, creme fraiche.
- Cut the pastry into 6 circles and push the discs into a lightly greased muffin tin. Pour the filling into the pastry cases and bake for 10 minutes. Grate some additional cheddar cheese over the top and bake for another 10 minutes, or until golden brown.
