Cherry and coconut slice
We can’t think of anything more delicious than the combination of cherry and coconut, which come together harmoniously in this sweet slice.
Ingredients:
- 100g of butter
- 1 cup of caster sugar
- 3 eggs
- 1 cup of flour
- ½ cup of raspberry jam
- 1 400g can of black cherries, pitted, drained and halved
- 2 cups of shredded coconut
- 1 cup of desiccated coconut
Method:
1. Preheat your oven to 180°C and grease and line a 19cm by 29cm baking pan.
2. In a large bowl, add butter and half the sugar. Use an electric mixer to beat until smooth.
3. Whisk in 1 egg and add flour, stirring until combined.
4. Pour into pan, smoothing the surface and bake for 20 minutes or until golden.
5. Pour jam over cooked base and spread. Add cherries, arranging evenly.
6. In a bowl, whisk together remaining eggs and sugar. Add both coconuts and mix.
7. Sprinkle over the cherries and bake for 25 to 30 minutes or until coconut turns golden.
8. Let cool, slice into squares and serve.
