Chicken, bacon and pumpkin pasta bake
Now that autumn is well underway it is time to start planning dinners for a cosy night in. Hearty and warming, this pasta bake is just the ticket.
Ingredients:
- 500g butternut pumpkin, peeled, cut into 1cm cubes
- 1 ½ tablespoons olive oil
- 500g dried macaroni pasta
- 400g chicken breast fillets
- 2 rashers middle bacon, trimmed
- 60g butter
- ⅓ cup plain flour
- 3 cups milk
- 1 ½ cups grated tasty cheese
- 50g baby spinach
- ½ cup grated parmesan cheese
