10-minute meal: Coriander and chilli prawn cocktail
Give the classic prawn cocktail a spicy twist with a touch of chilli, coriander and zesty lime. Oh what a refreshing dish this is!
Preparation: 10 minutes
Serves: 4
Ingredients:
- 1kg cooked king prawns, peeled, deveined, tails intact (see tip)
- 60g spinach leaves
Chilli, lime and coriander mayonnaise
- ½ cup Basic mayonnaise (see related recipe)
- 1 ½ tablespoons lime juice
- 1 tablespoon boiling water
- ½ cup chopped fresh coriander
- 1 small red chilli, deseeded, finely chopped
Method:
1. To make the chilli, lime and coriander mayonnaise, whisk mayonnaise, lime juice and water together in a bowl. Add coriander and chilli. Stir to combine.
2. Add prawns and toss to combine. Cover and refrigerate for at least 30 minutes, or up to 4 hours if time permits, to allow flavours to develop.
3. Divide spinach leaves between bowls. Top with coriander and chilli prawns. Serve.
