Chocolate Baileys icing
The perfect icing must surely be a combination of our two favourite guilty pleasures: chocolate and alcohol. This Chocolate Baileys icing tastes great over cakes, cupcakes or just on its own if you’re that way inclined.
Makes: Approximately 3 cups
Ingredients:
- 350g butter, softened
- 4 cups icing sugar
- 3 tablespoon cocoa powder
- 1 teaspoon vanilla essence
- 3 tablespoon Baileys Irish Cream (or other liqueur)
Method:
1. Add the softened butter to the bowl of a stand mixer (or a large bowl and using an electric hand beater). Whip the butter until it is pale and creamy, about 3 to 4 minutes.
2. Add two cups of the icing sugar to the butter and continue beating until combined. Then add the vanilla essence, cocoa powder and Baileys before adding the rest of the icing sugar. Beat until the icing is light and fluffy. If it's not the right consistency, either add some milk (or more Baileys) to make is softer and more spreadable, or alternately add some more icing sugar to make it a bit stiff.
