Decadent chocolate mousse sponge cake
This dessert is oh so decadent and well worth the extra effort to impress your friends and family for a special occasion. Or, just for when you want to treat yourself.
Ingredients:
- 4 eggs, room temperature
- ⅔ cup plain flour
- ½ cup caster sugar
- 2 tablespoons water
- 25g butter, melted
- 30g Dutch cocoa
- ¼ cup caster sugar (extra)
- 1 ½ tablespoons water (extra)
- 2 ½ teaspoon brandy
- Shaved chocolate and cocoa powder to serve
Mousse
- 400g milk chocolate, roughly chopped
- 200g dark chocolate, roughly chopped
- 4 ½ cups thickened cream
- 1 x 5g gelatine leaf
