Cobb salad
Cobb salad is an American recipe dating back to the 1920s or 1930s (like most recipes, there’s slight dispute over who invented it). It’s often eaten as a main meal, and will vary slightly wherever you go. But here’s our take on this delicious, filling salad.
Ingredients:
- 1 chicken breast
- Cherry tomatoes
- 2 hardboiled eggs
- ½ red onion
- 2 rashers of bacon
- 1 avocado
- Cos lettuce
- Fetta cheese
Method:
- Slice your chicken breast in half to make two thinner pieces, then cook in a medium-sized fry pan (you can marinate your chicken if you wish, or leave plain). Once it is cooked, leave it aside for a few minutes and then slice to desired size.
- Slice your bacon rashers and cook them in the same pan as the chicken.
- Quarter the cherry tomatoes, slice the avocado flesh, dice the onion, peel and slice the boiled eggs, and tear the lettuce leaves.
- Place the lettuce in a large bowl and then arrange the rest of your ingredients on top in clumps. Crumble the fetta over the top and drizzle with your favourite dressing.
