Corn soup
Light, healthy and delicious, you can’t go past this easy-to-make soup that’s as tasty as it is good for you.
Ingredients:
- 1 medium corn cob
- 1 cup milk
- 2 cups vegetable stock
- ½ tablespoon corn starch
- ½ teaspoon sugar
- Salt and pepper
Method:
- Boil corn cob in saucepan. Using a sharp knife scrape kernels from cob. Reserve two tablespoons of kernels for garnish.
- Blend remaining corn kernels with a little water into a smooth paste.
- Add milk, vegetable stock and remaining corn kernels. Bring to boil and let simmer for two to three minutes, stirring occasionally.
- Add corn flour dissolved in two tablespoons of water. Boil for three minutes or until the soup thickens. Season with salt and pepper. Garnish with chopped coriander.
