Easy fruit and nut oat slice

There are many ways, both sweet and savoury, to enjoy the goodness of rolled oats – and not just for breakfast. This fruit and nut oat slice proves it!

Ingredients:

Method:

  1. In a bowl combine the oats, flour, sugar, baking powder, desiccated coconut, dates, dried apricots and walnuts.
  2. Add a good pinch of ground ginger. Melt the butter, cool and whisk in the egg and a splash of vanilla extract.
  3. Fold this through the dry ingredients.
  4. Press mixture into an 18 x 20cm lined slice tin and bake at 180°C for 25 minutes.
  5. Slice and serve immediately or store in a sealed container.
