Gingerbread men
It’s beginning to look a lot like Christmas. And there isn’t a biscuit out there that represents the holiday season more deliciously than gingerbread men. Make your own with this recipe.
Ingredients:
Gingerbread Men
- 150g butter, chopped
- ½ cup firmly packed dark brown sugar
- ½ cup honey
- 1 teaspoon bicarbonate of soda, sifted
- 1 egg, lightly beaten
- 1 tablespoon ground ginger, sifted
- 1 teaspoon mixed spice, sifted
- ½ teaspoon baking powder, sifted
- 3 cups plain flour, sifted
Icing
- 1 eggwhite
- 1 ¼ cups pure icing sugar, sifted
- ½ teaspoon lemon juice
Method:
- Place butter, honey and sugar in a saucepan over medium heat. Cook for around about three minutes while stirring until sugar is deserved. Bring to the boil then remove from heat.
- Stir in bicarbonate of soda, then transfer to a large, heatproof bowl to cool.
- Stir in egg, ginger, mixed spice, baking powder and flour until combined.
- Divide dough in half, shape into discs and cover with plastic wrap.
- Refrigerate your dough for one hour or until firm.
- Preheat oven to 180°C. Grease three baking trays and line with baking paper.
- Roll on dough disc between two sheets of baking paper until roughly 3mm thick.
- Cut shapes from dough with gingerbread man cutter and reroll scraps and repeat.
- Bake, one tray at a time, for around about eight minutes until they’re firm to touch. Stand on trays for about five minutes, then transfer to wire rack to cool completely.
- Prepare your icing. Beat eggwhite in a bowl with a fork until foaming, and gradually beat in icing sugar until combined. Then stir in some lemon juice.
- Spoon icing into snap-lock bag, snip off a corner and decorate gingerbread men.
