Lime cheesecake
Creamy, tart and positively irresistible, this lime cheesecake will have you turning dinner guests away.
Ingredients:
For crust
- 2 cups of digestive biscuits, crushed
- ½ cup of butter, melted
- ¼ cup of granulated sugar
For filling
- 680g of cream cheese
- 1 cup of sugar
- 1 cup of sour cream
- ¼ cup of flour
- 2 teaspoons of vanilla extract
- 4 eggs
- ¾ cup of lime juice or less to taste (key limes if possible)
Method:
1. Combine biscuit crumbs, butter and sugar and press into the base of a 22cm springform pan. Bake at 190°C for seven to eight minutes.
2. In a bowl, cream the cream cheese. Add sugar, sour cream, eggs, flour and vanilla and mix until smooth. Add lime juice and stir.
3. Spoon mixture over crust. Bake at 190°C for 15 minutes. Reduce heat to 120°C and bake for an additional 50-55 minutes more.
4. Allow to cool in pan before loosening with a knife. Chill in pan for six hours and remove. Top with whipped cream to serve.
