Mint yoghurt dip

Forget store-bought dips, you can whip up this healthy recipe in no time at all and that way you’ll know exactly what’s in it. Simply serve with some veggies as a dip. It also works well with BBQ meats and salad.

Ingredients:

Method:

1. Finely chop the mint leaves, discarding the stalks, then add them to a mixing bowl.

2. Finely grate the zest of half a lemon, then transfer to the bowl.

3. Cut the lemon in half. Squeeze the juice into a bowl, using your fingers to catch any pips.

4. Finely chop the garlic on a board and add to the bowl.

5. Add the yoghurt and a tiny pinch of salt and pepper, then stir everything together.

6. Have a taste and add a squeeze more lemon juice, if you think it needs it.

7. Transfer to a serving bowl, garnish with herbs (or a mint leaf of two) if desired and serve with a platter of veggies for dipping.
