Nectarine tart
This counts as a serving of fruit, right? Because this delicious tart looks too good not to gobble down.
Serves: 8
Ingredients:
- 3 nectarines, cut into wedges
- 1 ½ cups plain flour
- 100g butter, chopped
- 2 eggs
- 1 teaspoon vanilla essence
- ½ cup self-raising flour
- 1 cup desiccated coconut
- ½ cup caster sugar, plus extra for sprinkling
Method:
1. Preheat oven to 180°C.
2. Place flour and butter in a large bowl. Using your hands, combine until mixture resembles breadcrumbs. Add a couple of tablespoons of water and mix until mixture sticks together enough to form into a ball. Roll out dough to fit a 22cm round flan tin. Chill for at least 20 minutes.
3. Line pastry tin with baking paper and fill with rice (or other baking weight). Blind bake for 15 minutes. Remove baking paper and weights, and bake for a further 15 minutes or until golden. Set aside to cool.
4. Meanwhile, to make filling, whisk eggs, sugar and vanilla essence together. Add self-raising flour and coconut. Mix well and pour into tart shell. Press nectarines into filling. Sprinkle with extra sugar. Bake for 20 minutes, or until golden brown.
