Easy peanut butter fudge
The perfect combination of sweet and savoury, whip up this treat in just a few minutes and enjoy the bite-sized deliciousness. It will also make a thoughtful gift when packaged up in a jar with a ribbon on top.
Ingredients:
- ½ cup butter
- ½ cup milk
- 2 ¼ cups brown sugar
- ¾ cup smooth peanut butter
- 1 teaspoon vanilla extract
- 3 ½ cups icing sugar
Method:
- Melt the butter in a medium saucepan over a medium heat.
- Stir in the brown sugar and milk. Bring to the boil and boil for two minutes, stirring frequently.
- Remove the pan from the heat and stir in the peanut butter and vanilla extract.
- Pour the icing sugar into a large bowl and pour the butter mixture over the top and beat until smooth.
- Pour into a 20cm by 20cm pan lined in baking paper and chill in the fridge until firm.
- Cut into squares and serve.
