Reader recipe: Banana cake
Over60 community member, Wendy Mills, 70, from Tarlee in South Australia shares her super-simple and scrumptious banana cake.
Preparation time: 10 minutes
Cooking time: One hour
Ingredients:
- 125 grams margarine
- 1/2 tablebspoon bicarbonate soda
- 3/4 cup sugar
- 1 tablebspoon vanilla essence
- 2 eggs
- 1 tablebspoon milk
- 2 to 5 mashed bananas
- 1.5 cups self raising flour
- 1 cup sultanas (optional but recommended)
Method:
1. Cream together margarine and sugar, add eggs, bananas and sultanas.
2. Mix together bicarbonate soda, vanilla essence and milk and heat in a saucepan.
3. Add flour and heated mix to banana mixture.
4. Pour mixture evenly into two loaf tins and bake at 180 degrees for 45 minutes to one hour.
Tip: This cake is nice with finished with a lemon icing.
