Saffron rice
Quick, easy and deliciously aromatic, this saffron rice is a colourful change up to the usual white rice dish.
Serves: 4
Ingredients:
- 60g butter
- 2 cups basmati rice
- 3 ½ cups chicken stock
- 1 pinch of saffron threads soaked in ¼ cup hot water for 10 minutes
- 1 teaspoon salt
Method:
1. Melt butter in saucepan over medium to high heat. Add rice, stock, salt, saffron and hot water. Bring to boil, cover and turn heat down to low.
2. Cook for 20 minutes without removing cover. Turn off heat and let rice sit for five minutes covered. Use fork to fluff up rice. Serve garnished with extra saffron threads.
