Simple tabouli salad
This delicious salad makes the most of fresh ingredients and works well with any grilled meat.
Serves: 4
Ingredients:
- 1 teaspoon fresh lemon zest
- ¼ cup lemon juice
- ¼ cup olive oil
- Salt and pepper to taste
- ¼ cup cracked bulgur
- ½ small red onion, peeled and finely diced
- 1 bunch of flat leaf parsley
- 2 medium sized cucumbers, diced
- 2 tomatoes, diced
Method:
1. Place the zest, juice, oil, pepper and salt in a bowl with the bulgur and allow to soak for 30 minutes.
2. Wash and dry the parsley and slice as thinly as you can. Place into a large bowl.
3. Add the cucumber, tomato, onion, along with the bulgur and dressing.
4. Toss to combine and serve immediately, or chill in the fridge to allow the flavours time to develop further.
