Tomato and tarragon chicken
Sick of having boring chicken every night? Switch things up with this delicious and healthy tomato tarragon chicken.
Ingredients:
- 2 tablespoon of olive oil
- 4 chicken thighs
- 1 brown onion, sliced
- 2 garlic cloves, sliced
- 200g of halved button mushrooms
- 125ml of white wine
- 2 x 400g cans of peeled tomatoes
- 125ml of chicken stock
- ¼ cup of chopped fresh tarragon leaves
- ¼ cup of fresh chopped continental parsley leaves
- Basil leaves, to garnish
Method:
1. Add two teaspoons of olive oil in a deep frying pan on medium-high heat. Use salt and pepper to season chicken thighs. Cook each side of chicken for two to three minutes and remove.
2. Reheat remaining oil and cook garlic, button mushrooms and onions on medium heat. Add white wine and cook four two minutes.
3. Add the chicken stock, peeled tomato and fresh tarragon and simmer.
4. Replace chicken in pan and cook for 12 to 15 minutes. Turn chicken once.
5. Season with salt and pepper and serve, garnishing with chopped parsley and basil.
