Winter warmer seafood stew

Rustic, rich and very tasty, this winter warmer fish stew will warm your bones and make the cold seem like a distant memory. Serve hot with crusty bread.

Method:

  1. To begin, heat olive oil in a large saucepan over a low to medium heat.
  2. Add onion, celery and garlic and cook for around about five minutes.
  3. Add tomatoes, stock, wine and bay leaf and bring the stew to the boil.
  4. Reduce heat to medium and let simmer, partially covered, for about 20 minutes.
  5. Add a pinch of sugar for flavour.
  6. Prepare the seafood ingredients. Cut fish into small chunks, peel and devein prawns leaving the tails on and make sure you scrub the mussels, removing the beards.
  7. Add fish to the saucepan and let simmer for five minutes before adding the other seafood.
  8. Cover and cook for a few minutes. Make sure you discard any unopened mussels. 
  9. Serve, topped with parsley and lemon rind.
