Rich beef goulash

A great hearty meal, this beef goulash recipe is perfect for a cosy night in. Just serve with a glass of red.

Ingredients:

  • 2 tablespoons olive oil
  • 750g gravy beef, cut into 3cm cubes
  • 1 large brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 200g button mushrooms
  • 2 large red capsicums, roughly cut into pieces
  • 2 carrots, thinly sliced
  • 2 tablespoons plain flour
  • 2 tablespoons sweet paprika
  • 2 dried bay leaves
  • 2 cups beef stock
  • 400g can diced tomatoes
  • 2 tablespoons sour cream
  • Parsley and sour cream, to serve
