Chicken, bacon and pumpkin pasta bake

Now that autumn is well underway it is time to start planning dinners for a cosy night in. Hearty and warming, this pasta bake is just the ticket.

Ingredients:

  • 500g butternut pumpkin, peeled, cut into 1cm cubes
  • 1 ½ tablespoons olive oil
  • 500g dried macaroni pasta
  • 400g chicken breast fillets
  • 2 rashers middle bacon, trimmed
  • 60g butter
  • ⅓ cup plain flour
  • 3 cups milk
  • 1 ½ cups grated tasty cheese
  • 50g baby spinach
  • ½ cup grated parmesan cheese
