Fluffy blueberry pancakes

For a special weekend breakfast, these pancakes are worth the wait while the batter works its magic.

Makes: 12

Ingredients:

  • 1 ¼ cups plain flour
  • Pinch of salt
  • 1 tbsp baking powder
  • 1 tsp sugar
  • 1 egg
  • 1 cup milk
  • 1 tbsp melted butter
  • ½ cup blueberries, thawed if frozen
  • Olive oil spray

Method:

1. Sift the flour, salt, baking powder and sugar into a bowl.

2. Add the egg, milk and butter and stir to combine.

3. Fold in the blueberries and set the batter aside for one hour.

4. Heat a large non-stick pan on medium high.

5. Pour the batter into the pan and cook until golden brown on each side.
