Pasta Napolitana

Pasta Napolitana

This tasty pasta dish is so quick and easy to whip up, it’s sure to become a favourite mid-week dinner.

Ingredients:

  • 400g penne pasta
  • 2 tablespoons olive oil
  • 2 shallots, diced
  • 2 cloves garlic, crushed
  • 400g cherry tomatoes, halved
  • 2-3 tablespoons tomato puree
  • 1 tablespoon mixed herbs
  • 100ml water
  • Salt and freshly ground black pepper
  • Parmesan cheese

Method:

  1. Cook the penne according to directions on the packet.
  2. In a separate saucepan, heat the oil and add the shallots and garlic. Gently cook for two to three minutes until soft.
  3. Add the cherry tomatoes, puree, mixed herbs and water to the saucepan and bring to the boil. Simmer for 15 minutes until soft. Season with salt and pepper to taste.
  4. Drain the pasta and stir through the sauce.
  5. Serve hot with grated parmesan.
