Spiced cauliflower

If you’re looking for a way to spice up the way you eat your vegetables, try this delicious spiced cauliflower.
Ingredients:
- 500g cauliflower, cut into florets
- 1 tablespoon rice flour
- ¼ cup cornflour
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 3 teaspoons sweet paprika
- 1 teaspoon chilli flakes (optional)
- Vegetable oil
Method:
- Fill a large saucepan with water. Add salt and bring to a boil. Cook the cauliflower for one minute, then drain.
- In a large snap lock bag, combine the rice flour, cornflour, cumin, and smoked paprika. Toss the cauliflower in this mixture until well coated.
- Add about five-cm of vegetable oil to a wok and heat to about 180°C. Cook the cauliflower in batches for three to four minutes, or until golden-brown. Allow to drain on paper towel.
- Toss the cooked cauliflower in the sweet paprika and chilli flakes, and serve with your favourite zesty dipping sauce.
