Tzatziki dip

Tzatziki dip

Tzatziki, a Greek youhurt and cucumber dip, is delicious served with flat bread, grilled meats or whatever you choose.

Ingredients:

  • 2 telegraph cucumbers, peeled, halved lengthways, seeds removed
  • 2 cups Greek natural yoghurt
  • 2 garlic cloves, crushed
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cumin
  • 1 tablespoon salt
  • Pepper to season 
  • 1 tablespoon of fresh dill, chopped 

Method:

  1. Grate cucumber into bowl. Sprinkle generously with salt and mix well. Press cucumber through a sieve to get rid of excess moisture.
  2. Combine yoghurt, garlic, oil, lemon juice and cumin in bowl.  Stir through cucumber. Season with pepper to taste. Cover and refrigerate overnight. Serve.
