Decadent chocolate mousse sponge cake

This dessert is oh so decadent and well worth the extra effort to impress your friends and family for a special occasion. Or, just for when you want to treat yourself.

Ingredients:

  • 4 eggs, room temperature
  • ⅔ cup plain flour
  • ½ cup caster sugar
  • 2 tablespoons water
  • 25g butter, melted
  • 30g Dutch cocoa
  • ¼ cup caster sugar (extra)
  • 1 ½ tablespoons water (extra)
  • 2 ½ teaspoon brandy
  • Shaved chocolate and cocoa powder to serve

Mousse

  • 400g milk chocolate, roughly chopped
  • 200g dark chocolate, roughly chopped
  • 4 ½ cups thickened cream
  • 1 x 5g gelatine leaf
