Peach salsa

Peach salsa

Not only delicious with tortilla chips (or even on its own), this peach salsa is also great as a topping for fish or pork dishes.

Serves: 4

Ingredients:

  • 2 yellow peaches, stone removed, diced, skin on
  • 2 Lebanese cucumbers, diced
  • 1 large red capsicum, diced
  • Juice of 1 lime
  • 1 tablespoon fresh coriander, finely chopped

Method:

1. Mix peaches, cucumber and capsicum together in a large bowl.

2. Squeeze the lime juice onto the salad and add coriander.
