Cheese fondue

Looking for something delicious and different to cook for dinner? Try this simple old-school favourite.

Ingredients:

1 cup white wine

1 garlic clove, crushed

1 2/3 cups gruyere cheese, grated

1 2/3 cups cheddar cheese, grated

1 tablespoon extra virgin olive oil

1/2 cup mascarpone

1 to 2 tablespoons kirsch

Wood-fired bread, toasted or chargrilled, cut into pieces

Method:

Place wine and garlic in a saucepan over medium-low heat and cook for five to six minutes until reduced by half. Add gruyere and cheddar and melt, stirring occasionally, until smooth and combined.

Meanwhile, brush bread with oil and chargrill until crisp and golden.

When you're ready to serve, stir the mascarpone into the fondue, add the kirsch to taste and enough boiling water to make a loose, smooth sauce.

Note: As well as bread you might want to also offer other things for dipping such as prawns or broccoli.
