Italian village offers $1 homes to Americans upset by US election results

<p>An Italian village in Sardinia, Italy is offering one-euro homes to Americans seeking a new start following the results of the 2024 U.S election that saw Donald Trump being re-elected as president. </p> <p>Ollolai has long been trying to persuade outsiders to move in to revive the community after decades of depopulation. </p> <p>Now, it's selling dilapidated houses for as little as one euro — just over a US dollar or $AU1.60 — to entice Americans to move abroad. </p> <p>Following the November 5 outcome, they have launched a website aimed at potential American expats, offering cheap homes in hopes that those disappointed by the result and seeking a fresh start will snap up one of their empty properties. </p> <p>"Are you worned (sic) out by global politics? Looking to embrace a more balanced lifestyle while securing new opportunities?" the website read. </p> <p>"It's time to start building your European escape in the stunning paradise of Sardinia."</p> <p>Mayor Francesco Columbu told CNN that the website was specifically created to attract American voters in the wake of the presidential elections.</p> <p>The mayor loves the United States and is convinced Americans would be the best people to revive the community. </p> <p>"We just really want, and will focus on, Americans above all," he said. </p> <p>"We can't of course ban people from other countries to apply, but Americans will have a fast-track procedure. We are betting on them to help us revive the village, they are our winning card."</p> <p>The village is offering three tiers of accommodation: Free temporary homes to certain digital nomads, ($1.6) homes in need of renovations, and ready-to-occupy houses for prices up to $160,000.</p> <p>The mayor also set up a special team to guide interested buyers through every step of the process including finding contractors, builders and navigating required paperwork. </p> <p>"Of course, we can't specifically mention the name of one US president who just got elected, but we all know that he's the one from whom many Americans want to get away from now and leave the country," Columbo added. </p> <p>"We have specifically created this website now to meet US post-elections relocation needs. The first edition of our digital nomad scheme which launched last year was already solely for Americans."</p> <p>Photos and plans of available empty properties will soon be uploaded to the website. </p> <p>The website has since received nearly 38,000 requests for information on houses, with most of them coming from the United States</p> <p>In the past century, Ollolai's population has shrunk from 2,250 to 1,300 with only a handful of babies born each year. </p> <p>Over the last few years, this has dropped 1,150 residents. </p> <p><em>Image: Shutterstock</em></p> <p> </p>

What’s the difference between MSG and table salt? A chemist explains

You’ve worked hard to prepare a nutritious and tasty meal. But after taking your first bite you feel something is missing. Perhaps you should have added more salt? Pepper? Or maybe even something more exotic like monosodium glutamate, better known as MSG?</p> <p>There are many <a href="https://theconversation.com/explainer-what-are-e-numbers-and-should-you-avoid-them-in-your-diet-43908">food additives</a> used in both home cooking and commercial products. These ingredients improve the flavour, smell, texture, appearance and longevity of foods.</p> <p>Salt and MSG are two well-known food additives. Both contain sodium, but there are plenty of differences which you can use to your benefit.</p> <h2>What is a salt?</h2> <p>Salts are made of positively and negatively charged components called ions. Salts generally dissolve in water, and are brittle. The names of salts often feature a metal (positively charged) followed by a non-metal (negatively charged).</p> <p>The common kitchen ingredient we call “salt” is just one type of salt. To distinguish it from all other salts, we should more specifically refer to it as “table salt”. Chemically, it’s sodium chloride.</p> <h2>Sodium chloride</h2> <p>After the quick chemistry lesson above, we can see that table salt, sodium chloride, contains a positively charged sodium and a negatively charged chlorine.</p> <p>These charged components are arranged in crystals of salt in a regular repeating pattern. Each sodium ion is surrounded by six chloride ions and each chloride ion is surrounded by six sodium ions. This arrangement gives the crystal a “cubic” form. It is found <a href="https://theconversation.com/i-have-always-wondered-why-is-the-sea-salty-83489">dissolved in Earth’s oceans</a>. Mineral deposits of salt, known as halite or rock salt, formed from the evaporation and crystallisation of ancient seas.</p> <p>Depending on the source, the salt may contain many other trace minerals that can even add colour to it, such as the pink-coloured Himalayan salt from Pakistan. Salt can also be fortified with <a href="https://www.who.int/publications/i/item/9789240053717">sodium iodide</a> as a public health measure.</p> <p>Describing the taste of salt is quite difficult without using the word “salty”. It’s a very common food additive, as it is so abundant and versatile. It is an essential ingredient for many traditional food preservation techniques for meats (pork and fish), vegetables (kimchi, sauerkraut and pickles), and dairy (cheese and butter).</p> <p>Salt is considered a universal flavouring agent. It can mask bitter flavours and bring out sweet, sour and <a href="https://theconversation.com/the-asian-roots-of-umami-the-fifth-taste-central-to-thanksgiving-fare-50699">umami</a> (savoury) ones.</p> <p>Despite popular depictions of <a href="https://theconversation.com/that-neat-and-tidy-map-of-tastes-on-the-tongue-you-learned-in-school-is-all-wrong-44217">taste maps</a>, there is no one place on the tongue where we taste salt. Other sodium salts can also give a “salty” taste, but the effect declines (and can even turn to bitter) with negatively charged components other than chloride.</p> <h2>MSG or monosodium glutamate</h2> <p>Monosodium glutamate is also a salt. The glutamate is the negatively charged form of glutamic acid, an amino acid that is found in nature as a building block of proteins.</p> <p>MSG, and more generally glutamates, are found in a wide range of foods including tomatoes, Parmesan cheese, soy sauce, dried seaweeds, Worcestershire sauce and protein-rich foods. All of these foods impart umami flavours, which are described as savoury or meaty.</p> <p>Commercial MSG is not extracted from the environment but produced by bacterial fermentation. Glucose is converted to glutamic acid, which is further processed by adding sodium hydroxide to form MSG (and water).</p> <p>MSG is sold as crystals, but they have a long, prismatic shape rather than the cubic form of sodium chloride. It’s worth tasting a few crystals of MSG directly to experience the native taste of umami.</p> <p>Despite decades of bad press and concern, <a href="https://theconversation.com/msg-is-back-is-the-idea-its-bad-for-us-just-a-myth-or-food-science-237871">MSG is considered safe</a> to consume in the concentrations typically found in or added to foods.</p> <p>Table salt and MSG both contain sodium, but at different percentages of the total weight: table salt has around 40% sodium, versus just 14% in MSG. You are also more likely to be routinely adding table salt to your food rather than MSG.</p> <p>Eating too much sodium is well known to be unhealthy. <a href="https://theconversation.com/this-salt-alternative-could-help-reduce-blood-pressure-so-why-are-so-few-people-using-it-221409">Potassium-enriched substitutes</a> have been suggested for a range of health benefits.</p> <h2>A flavour enhancer</h2> <p>The flavour of MSG can be elevated further by combining it with other food additives, known as sodium ribonucleotides.</p> <p>Japanese and Korean cooks figured this secret out long before chemists, as boiling dried fish and seaweed produces foundation stocks (dashi) containing a mix of naturally sourced glutamates and ribonucleotides.</p> <p>Ribonucleotides are classified as “generally considered as safe” by <a href="https://www.cfsanappsexternal.fda.gov/scripts/fdcc/index.cfm?set=FoodSubstances&amp;id=DISODIUMINOSINATE&amp;sort=Sortterm_ID&amp;order=ASC&amp;startrow=1&amp;type=basic&amp;search=disodium">food standards authorities</a>. Humans consume many grams of the natural equivalent in their diets.</p> <p>What can be more problematic are the carbohydrates- and fat-rich foods that have their flavours enhanced, which can potentially lead us to eat excessive calories.</p> <p>The combination of MSG and ribonucleotides produces a more-ish sensation. Next time you see a bag of potato chips or instant noodles, have a quick look to see if it contains both MSG (E621) and a ribonucleotide source (E627–E635).</p> <p>I personally keep a jar of MSG in my kitchen. A little goes a long way to elevate a soup, stew or sauce that isn’t quite tasting the way you want it to, but without adding too much extra sodium.<!-- Below is The Conversation's page counter tag. The five best European Christmas markets

<p dir="ltr">A savvy traveller has shared her top five favourite Christmas markets in Europe, after visiting more than 100 festive markets. </p> <p dir="ltr">Originally from Texas, Helene Sula became enamoured with European festive traditions since moving to Heidelberg, Germany, in 2016. </p> <p dir="ltr">She told <em><a href="https://www.dailymail.co.uk/travel/article-13982839/100-Christmas-markets-favourite-five-Helene-Sula-Germany-France-UK-Austria.html">MailOnline Travel</a></em>, “Heidelberg was my first ever Christmas market and I was obsessed. I made it my mission to see as many as possible. The feeling was like being a kid at Christmas all over again. The magic felt real.”</p> <p dir="ltr">Despite her love for her local Christmas market, Helene shared the other four markets that have captured her heart, all while paying homage to the one that kicked off her love affair with Christmas festivities. </p> <p dir="ltr"><strong>Cologne, Germany</strong></p> <p dir="ltr">According to Helene, the Christmas market in Cologne is not to be missed. </p> <p dir="ltr">The travel blogger said, “Cologne’s Christmas market near the cathedral is breathtaking. The towering Gothic architecture of the Cologne Cathedral creates the perfect backdrop for the festive lights and stalls.”</p> <p dir="ltr">“The market is expansive, with plenty of food options - make sure to try the Reibekuchen (potato pancakes) and mulled wine. It’s also great for families, with a skating rink and carousel.”</p> <p dir="ltr"><strong>Strasbourg, France</strong></p> <p dir="ltr">The keen traveller said France always offers “authenticity” in their Christmas markets.</p> <p dir="ltr">Helene comments, “Known as the Capital of Christmas, Strasbourg is one of the oldest and most beautiful Christmas markets in Europe.” </p> <p dir="ltr">“The entire city is transformed into a festive wonderland, with stunning decorations, multiple market squares, and delicious local treats like tarte flambée and bredele cookies. The charm and authenticity of this market are unmatched.”</p> <p dir="ltr"><strong>Heidelberg, Germany</strong></p> <p dir="ltr">Despite travelling all over the continent for Christmas festivities, Helene’s local market of Heidelberg is still one of her favourites. </p> <p dir="ltr">“Heidelberg holds a special place in my heart as it was the first Christmas market I visited after moving to Germany,” comments the traveller. </p> <p dir="ltr">“The market goes along the Hauptstrasse, one of the longest pedestrian streets in Europe! You'll wander through the beautiful historic old town, with the illuminated Heidelberg Castle overlooking the city.”</p> <p dir="ltr">“The ice-skating rink and warm treats like bratwurst make this market feel intimate and magical. Also, get some fries!”</p> <p dir="ltr"><strong>Ribeauville, France</strong></p> <p dir="ltr">According to Helene, this historic market offers a step back in time to Christmas of years past.</p> <p dir="ltr">She said, “Ribeauville is a medieval-themed Christmas market, and it's one of the most unique I've ever visited.The town feels like it's straight out of a fairytale, with medieval music, costumes, and performances that transport you back in time.” </p> <p dir="ltr">“It's only open two weekends a year so you have to plan! Matcha is having a moment. What are the health benefits of this green tea drink?

<div class="theconversation-article-body"> <p><em><a href="https://theconversation.com/profiles/evangeline-mantzioris-153250">Evangeline Mantzioris</a>, <a href="https://theconversation.com/institutions/university-of-south-australia-1180">University of South Australia</a></em></p> <p>Matcha has experienced a surge in popularity in recent months, leading to reports of <a href="https://www.smh.com.au/goodfood/sydney-eating-out/global-matcha-shortage-hits-australia-as-skyrocketing-popularity-rivals-coffee-20241101-p5kn6v.html">global shortages</a> and price increases.</p> <p>If you haven’t been caught up in the craze, matcha is a powdered version of green tea. On a cafe menu you might see a hot or iced matcha latte, or even a matcha-flavoured cake or pastry. A quick google brings up <a href="https://www.foodandwine.com/tea/matcha-tea/matcha-recipes">countless recipes</a> incorporating matcha, both sweet and savoury.</p> <p>Retailers and cafe owners <a href="https://www.smh.com.au/goodfood/sydney-eating-out/global-matcha-shortage-hits-australia-as-skyrocketing-popularity-rivals-coffee-20241101-p5kn6v.html">have suggested</a> the main reasons for matcha’s popularity include its “instagrammable” looks and its purported health benefits.</p> <p>But what are the health benefits of matcha? Here’s what the evidence says.</p> <h2>First, what is matcha?</h2> <p><a href="https://www.mdpi.com/1420-3049/26/1/85">Matcha</a> is a finely ground powder of green tea leaves, which come from the plant <em>Camellia sinensis</em>. This is the same plant used to make green and black tea. However, the <a href="https://naokimatcha.com/blogs/articles/how-matcha-is-made-in-japan">production process</a> differentiates matcha from green and black tea.</p> <p>For matcha, the tea plant is grown in shade. Once the leaves are harvested, they’re steamed and dried and the stems are removed. Then the leaves are carefully ground at controlled temperatures to form the powder.</p> <p>The <a href="https://pmc.ncbi.nlm.nih.gov/articles/PMC6571865/">production process</a> for green tea is simpler. The leaves are picked from the unshaded plants, heated and then dried. We then steep the dried leaves in hot water to get tea (whereas with matcha the whole leaf is consumed).</p> <p>With black tea, after the leaves are picked they’re exposed to air, which leads to oxidation. This makes the leaves black and gives the tea a different flavour.</p> <h2>A source of phytonutrients</h2> <p>Phytonutrients are <a href="https://theconversation.com/phytonutrients-can-boost-your-health-here-are-4-and-where-to-find-them-including-in-your-next-cup-of-coffee-132100">chemical compounds found in plants</a> which have a range of benefits for human health. Matcha contains several.</p> <p>Chlorophyll gives plants such as <em>Camellia sinensis</em> their green colour. There’s some evidence chlorophyll may have <a href="https://www.mdpi.com/2223-7747/12/7/1533">health benefits</a> – including anti-inflammatory, anti-cancer and anti-obesity effects – due to its antioxidant properties. Antioxidants neutralise free radicals, which are unstable molecules that harm our cells.</p> <p>Theanine has been shown to <a href="https://www.mdpi.com/2504-3900/91/1/32">improve sleep</a> and <a href="https://link.springer.com/article/10.1007/s11130-019-00771-5?crsi=662497574&amp;cicada_org_src=healthwebmagazine.com&amp;cicada_org_mdm=direct">reduce stress and anxiety</a>. The only <a href="https://www.sciencedirect.com/topics/medicine-and-dentistry/theanine">other known</a> dietary source of theanine is mushrooms.</p> <p>Caffeine is a phytonutrient we know well. Aside from increasing alertness, caffeine has also demonstrated <a href="https://www.tandfonline.com/doi/full/10.1080/10408398.2022.2074362?casa_token=ADALIs6M3iAAAAAA%3AXpY35se0zLddAEIbZAaeCcDaNWm94s2WJaDHfXDRvVZgYq_xTxsCFuvtrtNXMXAL9uNIvLlYzO30aA#abstract">antioxidant effects</a> and some protection against a range of chronic and neurodegenerative diseases. However, too much caffeine can have negative side effects.</p> <p>Interestingly, shading the plants while growing appears to <a href="https://scijournals.onlinelibrary.wiley.com/doi/pdfdirect/10.1002/jsfa.9112?casa_token=KxVD9i9p4BsAAAAA:OwGTauXFHAndyJkam8WuXrmGQ2k1kaSRu5pOqJOrhSyRSeWkDwdrI23qaD5WVH1HGqZLFdsjP9ZTvolw">change the nutritional composition</a> of the leaf and may lead to higher levels of these phytonutrients in matcha compared to green tea.</p> <p>Another compound worth mentioning is called catechins, of which there are several different types. Matcha powder similarly has <a href="https://theconversation.com/matcha-tea-what-the-current-evidence-says-about-its-health-benefits-202782">more catechins</a> than green tea. They are strong antioxidants, which <a href="https://link.springer.com/article/10.1186/s41702-020-0057-8">have been shown</a> to have protective effects against bacteria, viruses, allergies, inflammation and cancer. Catechins <a href="https://www.sciencedirect.com/topics/medicine-and-dentistry/catechin#:%7E:text=Catechin%20is%20naturally%20present%20in,containing%20many%20catechins%20%5B130%2C131%5D.">are also found</a> in apples, blueberries and strawberries.</p> <h2>What are the actual health benefits?</h2> <p>So we know matcha contains a variety of phytonutrients, but does this translate to noticeable health benefits?</p> <p>A review published in 2023 identified only <a href="https://www.sciencedirect.com/science/article/pii/S2665927122002180">five experimental studies</a> that have given matcha to people. These studies gave participants about 2–4g of matcha per day (equivalent to 1–2 teaspoons of matcha powder), compared to a placebo, as either a capsule, in tea or in foods. Matcha decreased stress and anxiety, and improved memory and cognitive function. There was no effect on mood.</p> <p>A <a href="https://journals.plos.org/plosone/article?id=10.1371/journal.pone.0309287">more recent study</a> showed 2g of matcha in older people aged 60 to 85 improved sleep quality. However, in <a href="https://www.mdpi.com/2072-6643/16/17/2907">younger people</a> aged 27 to 64 in another study, matcha had little effect on sleep.</p> <p>A <a href="https://link.springer.com/article/10.1007/s11130-022-00998-9">study in people with obesity</a> found no difference in the weight loss observed between the matcha group and the control group. This study did not randomise participants, and people knew which group they had been placed in.</p> <p>It could be hypothesised that given you consume all of the leaf, and given levels of some phytonutrients may be higher due to the growing conditions, matcha may have more nutritional benefits than green tea. But to my knowledge there has been no direct comparison of health outcomes from green tea compared to matcha.</p> <h2>There’s lots of evidence for green tea</h2> <p>While to date a limited number of studies have looked at matcha, and none compared matcha and green tea, there’s quite a bit of research on the health benefits of drinking green tea.</p> <p>A <a href="https://www.sciencedirect.com/science/article/pii/S0944711317300867?casa_token=dpbAEQQ7Is4AAAAA:U6aggqZM_G0KJ8hkhx0TGSvQywr4utlgKzwUnUj9x5t9eWd-FKENjbTvUv6s4TBTaPYrob-qQkk">systematic review of 21 studies</a> on green tea has shown similar benefits to matcha for improvements in memory, plus evidence for mood improvement.</p> <p>There’s also evidence green tea provides other health benefits. Systematic reviews have shown green tea leads to <a href="https://onlinelibrary.wiley.com/doi/full/10.1002/ptr.6697?casa_token=1eAbmeGillYAAAAA%3ABNGBB6EuRFXIDWHgsa7E798wfC0MQK2r3yOmAlFzR2sxyD9Xt837VoCel0l6Tsh3RRO19t-YUm1GqO7Y">weight loss in people with obesity</a>, lower levels of <a href="https://link.springer.com/article/10.1186/s12937-020-00557-5">certain types of cholesterol</a>, and <a href="https://journals.lww.com/md-journal/fulltext/2020/02070/Effect_of_green_tea_supplementation_on_blood.36.aspx/1000">reduced blood pressure</a>. Green tea may also <a href="https://www.nature.com/articles/s41430-020-00710-7">lower the risk of certain types of cancer</a>.</p> <p>So, if you can’t get your hands on matcha at the moment, drinking green tea may be a good way to get your caffeine hit.</p> <p>Although the evidence on green tea provides us with some hints about the health benefits of matcha, we can’t be certain they would be the same. Nonetheless, if your local coffee shop has a good supply of matcha, there’s nothing to suggest you shouldn’t keep enjoying matcha drinks.</p> <p>However, it may be best to leave the matcha croissant or cronut for special occasions. When matcha is added to foods with high levels of added sugar, salt and saturated fat, any health benefits that could be attributed to the matcha may be negated.<!-- Below is The Conversation's page counter tag. Tourism hotspot in Italy attracts attention for selling strange souvenir

<p dir="ltr">Italy’s picturesque region of Lake Como has started selling a unique souvenir, making many people raise their eyebrows. </p> <p dir="ltr">The north Italian tourist hotspot has long been known for being the backdrop of many Hollywood films, while also hosting countless celebrity weddings, with many famous faces owning houses in the region. </p> <p dir="ltr">For those travelling to the stunning Lake Como and wanting to purchase a souvenir to remind them of their travels, you can now forgo the classic keyring or magnet for a more unique souvenir item.</p> <p dir="ltr">Communications company ItalyComunica says it has bottled the very air of Italy’s picturesque Lake Como and is selling these cans for €9.90 ($16 AUD) apiece.</p> <p dir="ltr">Each can is said to contain 400 millilitres of “100% authentic air” collected from Lake Como, with the website stating buyers can “Open it whenever you need a moment of escape, tranquillity, or simply beauty.”</p> <p dir="ltr">In an attempt to capitalise on the ever-growing visitor numbers, marketing specialist Davide Abagnale originally created the e-commerce site to sell dedicated Lake Como posters, before delving into the world of the unique souvenirs. </p> <p dir="ltr">His latest initiative of selling canned air aims to “create a souvenir that could be easily transported in a suitcase for tourists” and “something original, fun and even provocative.” </p> <p dir="ltr">Abagnale told <em><a href="https://edition.cnn.com/2024/11/04/travel/lake-como-air-cans-on-sale-intl-scli/index.html">CNN</a></em>, “It’s not a product, it’s a tangible memory that you carry in your heart,” adding that once tourists are home and have opened the can, they can repurpose it as a souvenir pen holder or plant holder. </p> <p dir="ltr">Not everyone was first onboard with the idea, as Como mayor Alessandro Rapinese said it wouldn’t be his first idea for tourists, and would prefer they take home other souvenirs, like the silk scarves the area is known for.</p> <p dir="ltr">“It’s a novel idea, but not for everyone,” he told <em>CNN</em>. “But as mayor of one of Italy’s most beautiful cities, if someone wants to take some of their air home, that’s fine as long as they also take beautiful memories of this area.”</p> <p dir="ltr"><em>Image credits: ItalyComunica/CNN/Shutterstock</em></p>

<p>Prince William has made a surprise appearance on Robert Irwin's Instagram as the pair team up for an important award ceremony in South Africa. </p> <p>The Prince of Wales and the wildlife warrior posted a video from Cape Town as they take part in the annual Earthshot Prize Awards: an initiative founded by William, of which Irwin is an ambassador.</p> <p>“G’day, it’s Robert here, with, of course, Prince William,” Irwin began the video. “Lovely to see you. How one elderly couple made their big move to Italy

<p>US couple Tony Smarrelli, 74, and his wife, Francine, 75, were celebrating their 50th wedding anniversary in Venice, Italy when they decided to move to Italy for good. </p> <p>The Smarrelli's, who are retired elementary teachers from New York and both of Italian descent relocated to the picturesque coastal town of Scalea in southern Italy. </p> <p>“We were in St Mark’s Square (in Venice) when a quartet started playing (classic Italian song) Malafemmina,” Tony recalled the day they decided to make the big move. </p> <p>“It brought tears to my eyes, because my father would put on his Italian records every Sunday for dinner and would sing that song to my mother.”</p> <p>Looking to reconnect with their Italian roots, they purchased a 139 metre property with three bedrooms, a dining room and a walk-in-closet for  for €150,000 ($A247,754) in November 2023.</p> <p>“We flew to Italy for the second time in 2023 and put an offer in for that home. We then secured our visas in the US in three hours, sold our home (in the US), packed up our belongings and flew back to Italy in December 2023,” Tony said.</p> <p>While their home in the peaceful coastal time was already livable when they bought it, the couple chose to renovate it, spending an extra €80,000 (about $A132,086) to retile the property, add a new plumbing and electric system, as well as two new bathrooms, an entire kitchen, doors, windows and screens.</p> <p>The property was renovated within four-months, and they said that a similar home in the US would have been nearly impossible for them to afford. </p> <p>“It would be easily $US1 ($A1.5) million to $2 million to live on a coast of South California or (a place with) any coastal views on the Eastern Seaboard,” Tony said. </p> <p>Tony's father and grandfather initially immigrated to the US in 1983 to make a better life for themselves, now 86 years later, Tony has returned to his homeland. </p> <p>“Some of my best friends said it takes a lot of guts to pick up and move to another country at 74 years of age.</p> <p>“I tell them it took guts for my father and grandfather to come to another country on a boat for eight weeks with no home, no work, very little money, no resources to make a better life for themselves,” Tony said.</p> <p>“In our modern world, it’s just a lifestyle change and for us, it was a good choice.”</p> <p>The couple said since their big move, they've cut back nearly y $3000 ($A4574) per month on expenses, which amounts to $36,000 ($A54,894) a year. </p> <p>The couple now spends about $1200 ($A1825) a month between the two of them.</p> <p>Back in the US, the couple's mortgage alone was  $US1500 per month ($A2281)</p> <p>“Monthly expenses in the US before leaving were between $US4800 to $US5000 a month. The science of the ideal salad dressing

And salads are even more delicious with a good dressing.</p> <p>Most salad dressings are temporarily stable mixtures of oil and water known as emulsions.</p> <p>But how do salad dressing emulsions form? And how can we enhance our emulsions for better salads and more?</p> <h2>Oil and water don’t mix</h2> <p>It’s accepted wisdom that oil and water don’t mix. The water and oil molecules have distinct chemical properties that don’t interact well together.</p> <p>You may have seen this if you’ve attempted to make a salad dressing by shaking together oil and vinegar (which is mostly water), which gives a temporary suspension that quickly separates.</p> <p>There is a large energy cost to breaking apart and mixing the water and oil layers. The secret to blending them together is to add an extra ingredient known as a “surfactant” or emulsifier.</p> <p>The name surfactant is derived from “surface active”. It highlights that these molecules work at the surface or interface to bridge the interactions between the oil and water. This is similar to how <a href="https://theconversation.com/what-is-sodium-lauryl-sulfate-and-is-it-safe-to-use-125129">detergents</a> are able to remove grease from your dishes.</p> <p>Many vinaigrette recipes call for emulsifiers without specifically mentioning their crucial emulsifying role.</p> <p>Key examples are mustard and garlic, which contain “mucilage” – a mix of carbohydrates – that can act as emulsifiers.</p> <p>So if your vinegar/oil salad dressings are separating, make sure you’re adding enough of these ingredients (which also contain <a href="https://theconversation.com/hate-vegetables-you-might-have-super-taster-genes-74428">wonderful flavour chemicals</a>).</p> <p>Commercial salad dressings also contain naturally sourced emulsifying carbohydrates. These will often be listed on the ingredients as generic “vegetable gum” or similar, and you may need to <a href="https://theconversation.com/busting-the-myth-that-all-food-additives-are-bad-a-quick-guide-for-label-readers-82883">read the label</a> and delve a little deeper into the <a href="https://www.foodstandards.gov.au/consumer/additives/additiveoverview/Documents/Food%20Additive%20Code%20Numbers%20%28July%202014%29.pdf">food additive number</a> to find out the source.</p> <p>Researchers have raised questions about <a href="https://theconversation.com/food-additives-and-chronic-disease-risk-what-role-do-emulsifiers-play-38492">synthetic emulsifiers used in processed food</a>, as studies in mice suggest they have health risks. It’s too early to say exactly what this means for humans.</p> <h2>Shake it ‘til you make it</h2> <p>Mixing is key to dispersing oil in water. While shaking a jar is convenient, a whisk or food processor will give a more complete emulsion. The white (or opaque) colour of many emulsions is due to the formation of microdroplets that scatter light.</p> <p>These mechanical mixing methods are even more essential for the formation of so-called “permanent emulsions” such as mayonnaise.</p> <p>Mayonnaise is an emulsion of oil in water, but egg yolk is the key emulsifier. Egg yolks contain long molecules called <a href="https://link.springer.com/referenceworkentry/10.1007/978-3-642-36605-5_28">phospholipids</a> that are able to interact with both the oil layer and the water. Mayonnaise is an impressively stable emulsion, which is why is can be sold in a shelf-stable form.</p> <p>But it isn’t infinitely stable; heating the mayonnaise emulsion will cause it to split. Perhaps you’ve hurriedly prepared a potato salad and added a mayonnaise-based dressing before the potatoes have cooled down?</p> <p>Or toasted a sandwich spread with mayonnaise? (Incidentally, adding mayonnaise to the <em>outside</em> of a toasted sandwich is an excellent path to some <a href="https://theconversation.com/kitchen-science-from-sizzling-brisket-to-fresh-baked-bread-the-chemical-reaction-that-makes-our-favourite-foods-taste-so-good-58577">delicious and crispy chemical reactions</a>.)</p> <p>The heat destabilises the emulsion and the separate oil and water phases will reform. Depending on the mixture, split emulsions may be recovered by adding more emulsifier and re-whisking or re-mixing.</p> <p>Hollandaise sauce is a notoriously difficult emulsion to prepare. The traditional hollandaise method involves whisking egg yolk, water, and lemon juice over a low heat, then slowly adding melted butter with further whisking. Not only can the emulsion split, but you can also overcook the added emulsifying egg yolk.</p> <p>The key to a successful hollandaise emulsion is separating the butter into fine, dispersed droplets, giving a thick and opaque mixture, but without cooking the eggs. Adding the butter too quickly or without sufficient mixing can give a split sauce.</p> <p>Using an <a href="https://www.seriouseats.com/foolproof-2-minute-hollandaise-recipe">immersion blender</a> can help, as can controlling the temperature of the melted butter. You might get a more consistently emulsified sauce with far less strain on your wrists.</p> <h2>You’ve got me feeling emulsions</h2> <p>Emulsions are used in many more places than salads and sauces. Most medicated creams, cosmetics and lotions are emulsions of oils and water, which is why they look white.</p> <p>Gardeners might be familiar with a mixture known as “<a href="https://www.abc.net.au/gardening/how-to/horticultural-oils/9428876">white oil</a>” – a mixture of vegetable oil and detergent. This brew, when diluted in water, is an inexpensive, effective, yet mild insecticide. Commercial versions often contain other pesticides, so make sure you read the label.</p> <p>Modern <a href="https://www.acs.org/education/whatischemistry/landmarks/acrylicemulsion.html">acrylic paints use emulsions</a> for both their manufacturing and application. The emulsions suspend the paint polymers in a water base.</p> <p>The water from the paint evaporates, leaving a film of paint polymers that can’t be re-dispersed into water. This clever chemical trick has saved huge quantities of oil-derived solvents from being used, <a href="https://theconversation.com/why-solvents-can-affect-brain-health-even-at-low-levels-of-exposure-98081">inhaled</a>, and emitted into the environment from traditional oil-based paints.</p> <p>Modern vaccines use <a href="https://theconversation.com/adjuvants-the-unsung-heroes-of-vaccines-156548">emulsions to increase the immune systems response</a>. Other common emulsions are inks, <a href="https://theconversation.com/how-does-ice-cream-work-a-chemist-explains-why-you-cant-just-freeze-cream-and-expect-results-205038">ice cream</a>, margarine and hair products, to name just a few.</p> <p>So next time you’re making a salad, check your emulsions. Nearly 200 chemicals linked to cancer found in everyday food packaging

<p>A new study has uncovered the alarming amount of potential carcinogens in food packaging and plastic tableware. </p> <p>Researchers from the Food Packaging Forum found that nearly 200 chemicals linked to breast cancer are being used in food packaging, with dozens of these carcinogens able to find their way into the body. </p> <p>“There is strong evidence that 76 known or potential breast carcinogens from food contact materials recently purchased all over the world can be found in people,” study co-author Jane Muncke said.</p> <p>“Getting rid of these known or suspected carcinogens in our food supply is a huge opportunity for cancer prevention.”</p> <p>Muncke is managing director and chief scientific officer at the Food Packaging Forum, a non-profit foundation based in Zurich, Switzerland focusing on science communication and research. </p> <p>The study, published last month in the journal Frontiers In Toxicology, compared a list of potential breast carcinogens to a list of chemicals that have been found in food contact materials to find out which of the potential carcinogens could be getting into people's diets. </p> <p>Of the 189 potential mammary carcinogens in food contact materials, with 143 of these found in plastics and 89 found in paper or cardboard. </p> <p>Of the recently detected chemicals found in food packaging, 40 have already been classified as hazardous by regulatory agencies around the world. </p> <p>Another research scientist, Jenny Kay, from Silent Spring Institute an organisation focused on the link between chemicals, women's health, and breast cancer said: “So many of these chemicals have already been classified as human health hazards, yet they are still allowed to be used in food contact materials thus allowing them to migrate into the food we eat." </p> <p>Early-onset breast cancer rates in women younger than 50 have been increasing, and experts said the trend cannot be explained by genetics alone. </p> <p>“Many of the mammary carcinogens are hormone disruptors, too, and many of the chemicals on our list can also damage DNA," Kay said. </p> <p>“Consumers should not have to keep track of all of the scientific literature on what chemicals to avoid. It should be on regulators to recognise the danger and take action.”</p> <p>The Consumer Brands Association, which represents the consumer products industry, said its members adhered to the US Food and Drug Administration’s evidence-based safety standards.</p> <p>“Packaging exists to protect and keep food safe for consumption,” the association’s senior vice president of product policy and federal affairs Sarah Gallo told <em>CNN</em>. </p> <p>“The FDA reviews and approves food contact substances through their science and risk-based system before they go to market.</p> <p>“The agency’s post-market review also provides continuous safety analysis and regulation of the approved substances.”</p> <p><em>Image: Shutterstock</em></p> <p> </p>

Maggie Beer wins top award while on the road to recovery

<p>Maggie Beer has been honoured with a top award just days after opening up about her recovery following a fall last month.</p> <p>The 79-year-old Aussie chef won Best Host of a Format at the C21 International Format Awards in Cannes for her role hosting <em>Maggie Beer’s Big Mission</em> on the ABC.</p> <p>The leading awards recognises creativity and excellence across the global television industry.</p> <p>Beer was the only woman in the category, beating some of the television industry's biggest names including Jimmy Kimmel for <em>Who Wants to Be a Millionaire US</em>, Stephen Fry in <em>Jeopardy UK</em>, Alan Cumming for <em>The Traitors US</em> and Big Zuu for <em>Big Zuu’s 12 Dishes in 12 Hours.</em></p> <p><em>Maggie Beer’s Big Mission</em> was inspired by the findings of the Royal Commission into Aged Care in 2021, which  exposed high rates of malnutrition in older adults living in aged care.</p> <p>In the show she led a world-first social experiment to transform the meals and dining experience at an aged-care home in Perth, WA. Beer and team of experts changed the menu, dining rooms and gardens using the "care model" to improve nutrition and wellbeing of residents. </p> <p>In a statement, Beer said it was a “privilege to actually live the experience in an aged-care home brave enough to show warts and all.”</p> <p>She learned what was acceptable to feed residents and what wasn't but “…most of all how to begin the journey of change to show the difference that is made to the happiness and wellbeing not only of the residents but the staff as well,” she said.</p> <p>“With her extraordinary leadership she has put older Australians first and given them a voice,” managing director of Artemis media, Celia Tait said.</p> <p>This comes just days after Beer opened up on her fall in August, where she suffered minor bone fractures and related injuries, telling her instagram followers that "even though I want to tell you how good I’m feeling now, I still have a way to go."</p> <p>“I will make a full recovery, and part of it is the care and the love that I’ve been given.”</p> <p><em>Images: Instagram</em></p>

Should King Charles apologise for the genocide of First Nations people when he visits Australia?

<div class="theconversation-article-body"><em><a href="https://theconversation.com/profiles/rebe-taylor-1379975">Rebe Taylor</a>, <a href="https://theconversation.com/institutions/university-of-tasmania-888">University of Tasmania</a> and <a href="https://theconversation.com/profiles/greg-lehman-18970">Greg Lehman</a>, <a href="https://theconversation.com/institutions/university-of-tasmania-888">University of Tasmania</a></em></p> <p>King Charles and Queen Camilla will visit Australia from Friday <a href="https://www.smh.com.au/politics/federal/from-bbqs-to-the-csiro-king-charles-and-queen-camilla-s-australian-itinerary-revealed-20240910-p5k9gb.html">on a five-day tour</a> of Canberra and Sydney.</p> <p>The king will be the second ruling British monarch to visit Australia, after <a href="https://theconversation.com/16-visits-over-57-years-reflecting-on-queen-elizabeth-iis-long-relationship-with-australia-170945">Queen Elizabeth II’s 16 visits over 57 years</a>.</p> <p>These visits showcase Australians’ evolving relationship with the monarchy and our colonial past.</p> <h2>Changing attitudes</h2> <p>An estimated <a href="https://theconversation.com/16-visits-over-57-years-reflecting-on-queen-elizabeth-iis-long-relationship-with-australia-170945">75% of Australians</a> greeted Elizabeth on her first tour in 1954, at events that celebrated Australia’s growth as a prosperous nation.</p> <p>Historical milestones remained central to the queen’s subsequent visits.</p> <p>In 1970, she attended the re-enactment of Captain Cook’s arrival at Botany Bay. This included depictions of shooting at First Nations actors.</p> <p>The queen’s 1986 visit included <a href="https://www.naa.gov.au/students-and-teachers/student-research-portal/learning-resource-themes/government-and-democracy/prime-ministers-and-politicians/queen-elizabeth-ii-signs-proclamation-australia-act-cth-1986">signing the Australia Act</a> that severed Britain’s formal powers over Australia.</p> <p>Her 1988 visit coincided with the Australian bicentenary of <a href="https://www.royal.uk/queen-marks-australias-bicentenary">the arrival of the First Fleet</a> carrying convicts and officials from Britain. But by this time, many Australians had lost their royal fervour.</p> <p>Her final tour, in 2011, came 12 years after Australia had attempted <a href="https://www.aec.gov.au/elections/referendums/1999_referendum_reports_statistics/1999.htm">to become a republic</a> by referendum.</p> <p><a href="https://www.bbc.com/news/uk-61585886">The queen’s death in 2022</a> not only reignited questions over the future of the monarchy in Australia, it instigated a public discussion over the monarchy’s role in imperial colonialism.</p> <h2>Genocide in Australia?</h2> <p>On the eve of <a href="https://commonslibrary.parliament.uk/research-briefings/cbp-9789/#:%7E:text=The%20Coronation%20of%20Their%20Majesties,Coronation%20in%20nearly%2070%20years.">Charles’ coronation in 2023</a>, Indigenous leaders from 12 settler states including Australia and New Zealand cosigned <a href="https://www.sbs.com.au/nitv/article/indigenous-people-around-the-world-have-sent-kin/rbfzwoyav">a letter calling on the new monarch</a> to apologise for the genocides that British colonisation brought to their territories.</p> <p>Australia was settled in the name of the Kingdom of Great Britain. Did that settlement result in genocide?</p> <p>Recent research led by Ben Kiernan for <a href="https://www.cambridge.org/core/series/cambridge-world-history-of-genocide/445A52F1E949DCB6CA8FC6BD09F04DE0">The Cambridge World History of Genocide</a> has investigated this question using the 1948 <a href="https://treaties.un.org/pages/ViewDetails.aspx?src=TREATY&amp;mtdsg_no=IV-1&amp;chapter=4">United Nations Convention on the Prevention and Punishment of the Crime of Genocide</a> as a framework.</p> <p>The convention defines genocide as “acts committed with intent to destroy, in whole or in part, a national, ethnical, racial or religious group”.</p> <p>The term “genocide” itself is modern; coined <a href="https://www.cambridge.org/core/books/cambridge-world-history-of-genocide/general-editors-introduction-to-the-series/986A5AFB44203A21265FF31C96C0DE3B">by Raphael Lemkin in 1944</a>. The <a href="https://www.cambridge.org/core/books/cambridge-world-history-of-genocide/genocide-in-van-diemens-land-tasmania-18031871/ED82A107B2C76801551EB3F51CA6179D">colonisation of Tasmania</a> by the British provided Lemkin with one of the clearest examples.</p> <p>The prosecution of crimes before 1951 is not permissible under the convention, but it provides a definitional framework to evaluate past events as constituent acts of genocide.</p> <p>The Cambridge World History of Genocide <a href="https://www.cambridge.org/core/books/the-cambridge-world-history-of-genocide/E60C05ADB875E63EE57B5D41EC4BA485">Volume II</a> and <a href="https://www.cambridge.org/core/books/cambridge-world-history-of-genocide/24002BE3CC6F69B96F0C21356E6D9282">Volume III</a> demonstrate how settlers and government agents committed acts of genocide against First Nations Australians from the beginning of settlement to the late 20th centuries.</p> <p>All parts of Australia are considered. Acts conforming to the convention’s clauses include killing, forcibly removing children and inflicting destructive conditions.</p> <p>Australian historian Lyndall Ryan’s chapter, <a href="https://www.cambridge.org/core/books/cambridge-world-history-of-genocide/frontier-massacres-in-australia-17881928/D1B285AF2125CA9586DBB1AFAF0CF70E">Frontier Massacres in Australia</a>, draws on her research for a <a href="https://c21ch.newcastle.edu.au/colonialmassacres/map.php">Massacre Map</a> showing how British troops and settlers committed more than 290 massacres across Australia between 1794 and 1928.</p> <p>These massacres killed more than 7,500 Aboriginal people.</p> <p>Ryan found the massacres were not sporadic and isolated – they were planned and sanctioned killings, integral to the aims of the Australian colonial project.</p> <p>Rebe Taylor’s <a href="https://www.cambridge.org/core/books/cambridge-world-history-of-genocide/genocide-in-van-diemens-land-tasmania-18031871/ED82A107B2C76801551EB3F51CA6179D">chapter on genocide in Tasmania</a> details a pattern of government-sanctioned mass killings in a colony where an estimated 6,000 Palawa (Tasmanian Aboriginal) people were reduced to about 120 by 1835.</p> <p><a href="https://www.cambridge.org/core/books/cambridge-world-history-of-genocide/genocide-in-northern-australia-18241928/69106AF545B4C98486752DBA88575E05">Raymond Evans</a> shows how as colonisation moved northward in Australia, massacres increased in size.</p> <p>Evans documents killings that persisted into the 1940s, postdating <a href="https://www.cambridge.org/core/books/cambridge-world-history-of-genocide/genocide-in-northern-australia-18241928/69106AF545B4C98486752DBA88575E05">the 1928 Coniston massacre</a> widely regarded as the last frontier slaughter.</p> <p>These findings are underscored by <a href="https://www.cambridge.org/core/books/cambridge-world-history-of-genocide/very-british-genocide/78EB24782843ABFA05965F5E4C7562CA">Tony Barta’s insight</a> that colonists’ destructive actions constitute a record of genocidal intent “more powerful than any documented plot to destroy a people”.</p> <p><a href="https://www.cambridge.org/core/books/cambridge-world-history-of-genocide/australias-stolen-generations-19142021/9219A470B4665A643DC99CC5BBE699D0">Research by Anna Haebich</a> documents the taking of Indigenous children during the 19th century.</p> <p><a href="https://www.cambridge.org/core/books/cambridge-world-history-of-genocide/australias-stolen-generations-19142021/9219A470B4665A643DC99CC5BBE699D0">Joanna Cruikshank and Crystal Mckinnon</a> explain how these state-sanctioned removals in the 20th century were intended to eliminate First Nations people from Australia’s national life.</p> <p>The 1997 <a href="https://humanrights.gov.au/our-work/projects/bringing-them-home-report-1997">Bringing Them Home</a> report, commissioned by the Human Rights and Equal Opportunity Commission, <a href="https://classic.austlii.edu.au/au/journals/IndigLawB/1997/95.html">concluded</a> the “Australian practice of Indigenous child removal involved […] genocide as defined by international law”.</p> <h2>A significant moment of resistance</h2> <p>The colonial governor of Tasmania began to exile Palawa people from their land in 1829.</p> <p>More than 200 survivors of the “<a href="https://theconversation.com/tasmanias-black-war-a-tragic-case-of-lest-we-remember-25663">Black War</a>” were removed to Flinders Island and subjected to life-threateningly harsh conditions. High death rates were caused by ill-treatment, disease and insufficient care.</p> <p>In 1846, the Palawa <a href="https://indigenousrights.net.au/__data/assets/pdf_file/0010/395794/f85.pdf">petitioned Queen Victoria</a> to honour the agreement made when they were removed: that in exchange for temporarily leaving their country, they would regain their freedom.</p> <p>In this bold petition, Tasmanian Aboriginal people initiated a historic appeal to the British monarchy.</p> <p>Aware of Queen Victoria’s sovereign authority across the vast British Empire, this action marked a significant moment in their continued resistance to genocide.</p> <h2>An acknowledgement of wrongs</h2> <p>British sovereignty over Australia was imposed without <a href="https://www.foundingdocs.gov.au/item-did-34.html">the required consent</a> of its First Nations. The result has been continued dispossession and suffering.</p> <p>Despite the <a href="https://www.royal.uk/the-role-of-the-monarchy#:%7E:text=Monarchy%20is%20the%20oldest%20form,resides%20with%20an%20elected%20Parliament">Crown’s deferral of power</a> to its parliament, the call for an apology from the king has immense symbolic importance.</p> <p>It is rooted in the desire for acknowledgement of wrongs. Jacinda Ardern receives Damehood at Windsor Castle

<p>Jacinda Ardern has been officially made a dame in a special ceremony at Windsor Castle in London. </p> <p>The former New Zealand prime minister received one of the country's highest honours on Wednesday, The New Zealand Order of Merit, for her services to the state. </p> <p>She was appointed a Dame Grand Companion a few months after her shock resignation as prime minister in 2023, but only just formally received her damehood from Prince William at the investiture ceremony in London. </p> <p>Prince William and Princess Catherine posted a clip of the moment Ardern received her damehood in a social media post, where they called her a friend and extraordinary advocate. </p> <p>"It was a privilege to present you with this deserved award at Windsor today!" he wrote. </p> <blockquote class="instagram-media" style="background: #FFF; 2024 Wildlife Photographer of the Year revealed

<p>The finalists of the 2024 Wildlife Photographer of the Year competition have been revealed, with the talented photographers capturing the magic of the animal kingdom. </p> <p>The competition, run by the Natural History Museum, saw its largest number of entries yet, with 59,228 entries from 117 countries and territories.</p> <p>Shane Gross, a Canadian photojournalist, was the overall winner of Wildlife Photographer of the Year for his captivating image capturing the "magical underwater world of western toad tadpoles."</p> <p>Kathy Moran, Chair of the Jury and Editor said: "The jury was captivated by the mix of light, energy and connectivity between the environment and tadpoles. From cheeky thrill to grande dame – the Moulin Rouge celebrates 135 years of scandal and success

<div class="theconversation-article-body"> <p><em><a href="https://theconversation.com/profiles/will-visconti-805914">Will Visconti</a>, <a href="https://theconversation.com/institutions/university-of-sydney-841">University of Sydney</a></em></p> <p>When the Moulin Rouge first opened on October 6 1889, it drew audiences from across classes and countries.</p> <p>The Moulin offered an array of <em>fin-de-siècle</em> (end-of-the-century) entertainments to Paris locals and visitors. Located in <a href="https://www.metmuseum.org/toah/hd/mont/hd_mont.htm">Montmartre</a>, its name, the “red windmill”, alluded to Montmartre’s history as a rural idyll. The neighbourhood was also associated with artistic bohemia, crime, and revolutionary spirit. This setting added a certain thrill for bourgeois audiences.</p> <p>From irreverent newcomer to a French institution, the Moulin Rouge has survived scandal, an inferno and found new ways to connect with audiences.</p> <h2>Red and electric</h2> <p>In 1889, the Moulin Rouge was not the only red landmark to open in Paris. The <a href="https://www.toureiffel.paris/en/news/history-and-culture/133-years-and-1083-feet#:%7E:text=The%20Tower%20would%20open%20to,Eiffel%20workshop%20in%20Levallois%2DPerret.">Eiffel Tower</a>, built as part of the <a href="https://www.britannica.com/topic/worlds-fair#ref1122093">Universal Exhibition</a> and originally painted red, had opened earlier that same year. What set them apart, however, was their popularity.</p> <p>The Moulin Rouge was an instant hit, capitalising on the global popularity of a dance called <a href="https://www.moulinrouge.fr/en/french-cancan-2/">the cancan</a>. Dancers like Moulin Rouge headliner <a href="https://commons.wikimedia.org/wiki/File:Portrait_de_la_danseuse_de_cancan_Louise_Weber_(1866-1929)_dite_la_Goulue_(%C3%A0_gauche)_et_de_Grille_d%27%C3%A9gout_(%C3%A0_droite),_da,_PH41845.jpg"><em>La Goulue</em> </a>(“The Glutton”, real name Louise Weber) were seen as more appropriate emblems for the city than the Tower, which many <a href="https://www.toureiffel.paris/en/news/130-years/artists-who-protested-eiffel-tower">considered an eyesore</a>.</p> <p>In an illustration from <em>Le Courrier Français</em> newspaper, a dancer modelled on a photograph of La Goulue holds her leg aloft, flashing her underwear with the caption “<a href="https://gallica.bnf.fr/ark:/12148/bpt6k1070090h/f1.image">Greetings to the provinces and abroad!</a>”.</p> <p>Every aspect of the Moulin spoke to the zeitgeist, from its design to the performances, the use of electric lights that adorned its façade, and its advertising.</p> <p>Its managers, the impresario team of <a href="https://www.moulinrouge.fr/en/the-great-periods/#:%7E:text=The%20masters%20of%20the%20place%20were%20Joseph%20Oller%20and%20Charles%20Zidler">Joseph Oller and Charles Harold Zidler</a>, had a string of successful venues and businesses to their names. They recognised the importance of modern marketing, using print media, publicity photographs, and <a href="https://commons.wikimedia.org/wiki/File:Cheret_Bal_au_moulin_rouge.jpg">posters</a> to spark public interest.</p> <p>Among the most iconic images of the Moulin is <a href="http://hdl.handle.net/10934/RM0001.COLLECT.339766">Henri de Toulouse-Lautrec’s 1891 poster</a>. At its centre is La Goulue, kicking her legs amid swirling petticoats.</p> <h2>She certainly can cancan</h2> <p>Found primarily in working-class dance halls from as early as the 1820s, the cancan became a staple of popular entertainment the world over.</p> <p>Part of the dance’s thrill lay in the dancers’ <a href="https://commons.wikimedia.org/wiki/File:La_Goulue_y_Valentin_le_D%C3%A9soss%C3%A9_bailando_en_el_Moulin_Rouge,_Th%C3%A9ophile_Steinlen.jpg">freedom of movement</a> and titillation of spectators, as well as its anti-establishment energy. Women used the cancan to thumb their nose at authority via steps like the <em>coup de cul</em> (“arse flash”) or <em>coup du chapeau</em> (removing men’s hats with a high kick).</p> <p>The cancan was not the only attraction at the Moulin. There were themed spaces, sideshows, and variety performances ranging from belly dancers and conjoined twins to <a href="https://www.weirdhistorian.com/le-petomane/">Le Pétomane</a> (“The Fartomaniac”) who was a flatulist and the highest-paid performer. People watching was equally popular.</p> <h2>Scandals, riots, and royalty</h2> <p>Over the years, the Moulin has been no stranger to controversy.</p> <p>In its early years, it cultivated an air of misbehaviour and featured in pleasure guides for visiting sex tourists.</p> <p>In 1893 it hosted the <a href="https://read.dukeupress.edu/french-historical-studies/article-abstract/33/1/69/9638/The-Art-of-Posing-Nude-Models-Moralists-and-the?redirectedFrom=PDF">Bal des Quat’z’Arts</a> (Four-Arts Ball) held by students from local studios. Accusations of public indecency were made against the models and dancers in attendance, and violent protests followed after the women were arrested.</p> <p>In 1907 the writer Colette appeared onstage at the Moulin in an Egyptian-inspired pantomime with her then-lover, <a href="https://daily.jstor.org/the-cross-dressing-superstar-of-the-belle-epoque/">Missy, the Marquise de Belbeuf</a>. When the act culminated in a passionate kiss, a riot broke out.</p> <figure><iframe src="https://www.youtube.com/embed/7N_dvUptKX8?wmode=transparent&amp;start=0" width="440" height="260" frameborder="0" allowfullscreen="allowfullscreen"></iframe><figcaption><span class="caption">Historical footage shows the Moulin Rouge as it was.</span></figcaption></figure> <h2>Kicking on and on</h2> <p>Over time, the Moulin Rouge shows changed their format to keep pace with public taste, though the cancan remained. The venue hosted revues and operettas, and various stars including Edith Piaf, Ella Fitzgerald, Frank Sinatra and Liza Minnelli.</p> <p>Famous guests have included British royalty: from Edward VII (while Prince of Wales) to his great-granddaughter, Queen Elizabeth II, and her son, Prince Edward.</p> <p>Since its opening, the Moulin’s fortunes have waxed and waned.</p> <p>In 1915 the Moulin Rouge <a href="https://archive.nytimes.com/iht-retrospective.blogs.nytimes.com/2015/02/27/1915-fire-destroys-moulin-rouge/">burned down</a> but was rebuilt in 1921. Its famous windmill sails <a href="https://www.bbc.com/news/world-europe-68895836">fell off overnight</a> earlier this year but were swiftly repaired.</p> <p>In the 1930s, it survived the Depression and rise of cinema (also <a href="https://www.imdb.com/title/tt0019186/?ref_=fn_al_tt_4">capturing the attention</a> of <a href="https://www.imdb.com/title/tt0025520/?ref_=fn_al_tt_3">several filmakers</a>). It also survived the <a href="https://www.thetimes.com/article/i-took-nazis-to-the-moulin-rouge-they-sent-me-to-auschwitz-s3lzxcwwn8q">Nazi occupation</a> of Paris in the 1940s.</p> <p>By the early 1960s, <a href="https://www.moulinrouge.fr/en/the-moulin-rouge/history/the-great-periods/#:%7E:text=Charles%20Trenet-,F%20FOR%20FORMIDABLE,-In%201962%2C%20Jacki">Jacki Clerico</a> was managing the Moulin’s show after his father had revamped the venue as a dinner theatre destination. The younger Clérico oversaw additions like a giant aquarium where dancers swam with snakes, and its now-famous “nude line” – a chorus of topless dancers – in its shows.</p> <p>In 1963, the Moulin Rouge struck upon a winning formula: revues, all named by Clérico with titles beginning with the letter “F” – from <em>Frou Frou</em> to <em>Fantastique</em> and <em>Formidable</em>. Since 1999, the revue <em>Féerie</em> (“Fairy”, also a <a href="https://dspace.library.uu.nl/bitstream/handle/1874/383977/Feeries.pdf?sequence=1">French genre</a> of stage extravaganza) has been performed almost without interruption.</p> <p>Ticket sales were boosted thanks to Baz Luhrmann’s 2001 film <a href="https://www.imdb.com/title/tt0203009/">Moulin Rouge!</a> and more recently <a href="https://moulinrougemusical.com/new-york/home/">Moulin Rouge! The Musical</a>.</p> <p>Since COVID, the Moulin Rouge management have diversified. The windmill’s interior has been <a href="https://news.airbnb.com/the-iconic-moulin-rouge-windmill-reveals-a-secret-room-for-an-overnight-stay-with-airbnb/">rented out via AirBnB</a> and the Moulin’s <a href="https://www.sbs.com.au/ondemand/tv-series/moulin-rouge-yes-we-can-can">dance troupe</a> has performed on France’s televised New Year’s Eve celebrations. This year, the Moulin Rouge and its dancers were part of the <a href="https://www.tiktok.com/@saskyacnn/video/7398138810984320288?is_from_webapp=1&amp;sender_device=pc&amp;web_id=7384693687676749320">Paris Olympics celebrations</a>, dancing in heavy rain.</p> <p>Though people have come to appreciate the Eiffel Tower too, the Moulin Rouge can still argue its status as the pinnacle of live entertainment in the French capital: immediately recognisable, internationally visible, and quintessentially Parisian.<!-- Below is The Conversation's page counter tag.
