A fiesta bean salad recipe for healthy hearing

If you’re wondering what you can do to help your hearing, look no further than this light, refreshing and oh-so-colourful salad. Filled with magnesium and omega-3, both of which support nerve function and expand blood vessels to improve blood flow around the cochlea, this healthy and delicious meal can not only satisfy your tastebud but meet your healthy hearing needs. It will make the perfect lunchtime snack or an accompaniment for a Mexican-themed inspired feast.

Serves: Four to six

Ingredients:

  • 1 cup of canned black beans, rinsed and drained
  • 1 cup of canned chickpeas, rinsed and drained
  • 1 cup of canned corn, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/4 cup coriander, chopped
  • 1 avocado, diced

Dressing

  • 2 cloves garlic, minced
  • Juice from a fresh lime
  • 1 tbsp extra virgin olive oil
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tbsp black pepper

Method:            

1. In a large bowl, combine the dressing ingredients together (garlic, lime juice, oil, cumin, salt and pepper) .

2. Add black beans, chickpeas, corn, tomato, onion and coriander and mix well.

3. Before serving, add the diced avocado and toss through. Option to add crumbled feta cheese as well.

TOP TIP: Can be served immediately or make a day ahead and stick in fridge to allow flavours to mix.
