Minty pea soup

Minty pea soup

This healthy soup is quick to whip up but still delicious enough to satisfy you on a cold winter’s day.

Ingredients:

  • 1 tablespoon olive oil
  • 1 brown onion, chopped
  • 4 garlic cloves, chopped
  • 3 cups chicken stock
  • ¼ cup mint leaves, chopped
  • 500g shelled fresh peas or frozen peas, thawed
  • Dollop of sour cream and mint leaves, to serve
  • Salt and pepper

Method:

1. Heat oil in saucepan over medium-high heat. Add onion and garlic. Cook until softened but not browned.

2. Add stock and bring to boil. Add peas. Reduce heat and simmer until peas are tender but still bright green, around five minutes for fresh peas and two minutes for frozen.

3. Stir in mint. Remove saucepan from heat.

4. Blend soup until smooth. Return soup to saucepan and cook for five minutes or until heated through. Season with salt and pepper.

5. Serve topped with a dollop of sour cream and garnish with mint leaves.
