Maple and mustard-glazed salmon

Maple and mustard-glazed salmon

A dinnertime staple, a touch of maple and mustard turns this dish into gourmet fare.

Ingredients:

  • 2 tablespoons olive oil
  • Salt and black pepper
  • 2 tablespoons pure maple syrup
  • 2 tablespoons whole-grain mustard
  • 700gm skinless salmon fillet, cut into four pieces
  • Lemon wedges, for serving 

Directions:

1. Heat oven to 220°C.

2. In a small bowl, mix together the maple syrup, mustard, and one-quarter teaspoon each salt and pepper.

3. Place the salmon on a baking sheet and brush it with the maple mixture. Roast on the top rack until opaque throughout – usually six to eight minutes.

4. Serve the salmon with vegetables of your choosing and lemon wedges.
