How do I keep my fruit, veggies and herbs fresh longer? Are there any ‘hacks’?

<div class="theconversation-article-body"><em><a href="https://theconversation.com/profiles/senaka-ranadheera-199225">Senaka Ranadheera</a>, <a href="https://theconversation.com/institutions/the-university-of-melbourne-722">The University of Melbourne</a></em></p> <p>We all know <a href="https://theconversation.com/frozen-canned-or-fermented-when-you-cant-shop-often-for-fresh-vegetables-what-are-the-best-alternatives-131678">fresh produce is good for us</a>, but fruit, vegetables and herbs have a tendency to perish quickly if left uneaten.</p> <p>This is because <a href="https://www.sciencedirect.com/science/article/abs/pii/S2212429219305188">even after harvesting</a>, produce from living plants tends to continue its biological processes. This includes respiration: producing energy from stored carbohydrates, proteins and fats while releasing carbon dioxide and water vapour. (Ever found a sprouting potato in your pantry?)</p> <p>On top of that, fresh produce also <a href="https://www.mdpi.com/journal/agriculture/special_issues/quality_safety_fresh_produce">spoils easily thanks to various microbes</a> – both harmless and ones that can cause disease, called pathogens.</p> <p>Simply chucking things in the fridge won’t solve the problem, as different types of plants will react differently to how they’re stored. So, how can you combat food waste and keep produce fresh for longer? Fortunately, there are some helpful tips.</p> <h2>Freshness and quality begin at the farm</h2> <p>Farmers always aim to harvest produce when it’s at an optimal condition, but both pre-harvest and post-harvest factors will affect freshness and quality even before you buy it.</p> <p>Pre-harvest factors are agricultural, such as climatic conditions, soil type and water availability. <a href="https://www.sciencedirect.com/science/article/abs/pii/S2212429219305188">Post-harvest factors</a> include washing and cleaning after harvesting, transportation and distribution, processing and packaging, and storage.</p> <p>As consumers we can’t directly control these factors – sometimes the veggies we buy just won’t be as good. But we can look out for things that will affect the produce once we bring it home.</p> <p>One major thing to look out for is bruised, wounded or damaged produce. This can happen at any stage of post-harvest handling, and can really speed up the <a href="https://www.sciencedirect.com/science/article/abs/pii/S0308814609001411">decay of your veggies and fruit</a>.</p> <p>Moisture loss through damaged skin speeds up deterioration and nutrient loss. The damage also makes it easier for <a href="https://www.sciencedirect.com/science/article/pii/S2468014119301943">spoilage microbes</a> to get in.</p> <h2>To wash or not to wash?</h2> <p>You don’t need to wash your produce before storing it. A lot of what we buy has already been washed commercially. In fact, if you wash your produce and can’t get it completely dry, the added moisture could speed up decay in the fridge.</p> <p>But washing produce <a href="https://theconversation.com/do-we-really-have-to-wash-fruit-and-vegetables-53039">just before you use it</a> is important to remove dirt and pathogenic bugs.</p> <p>Don’t use vinegar in your washing water despite what you see on social media. Studies indicate <a href="https://pubmed.ncbi.nlm.nih.gov/16496573/">vinegar has no effect</a> on lowering microbial loads on fresh produce.</p> <p>Similarly, don’t use baking soda. Even though there’s some evidence baking soda <a href="https://pubs.acs.org/doi/10.1021/acs.jafc.7b03118">can remove pesticide residues</a> from the surface of some produce, it’s not advisable at home. Just use plain tap water.</p> <h2>Location, location, location</h2> <p>The main thing you need is the correct type of packaging and the correct location – you want to manage moisture loss, decay and ripening.</p> <p>The three main storage options are on the counter, in the fridge, or in a “cool, dry and dark place”, such as the pantry. Here are some common examples of produce and where best to put them.</p> <p>Bananas, onion, garlic, potatoes, sweet potato and whole pumpkin will do better in a dark pantry or cupboard. Don’t store potatoes and onions together: onions produce a gas called ethylene that makes potatoes spoil quicker, while the high moisture in potatoes spoils onions.</p> <p>In fact, don’t store fruits such as apples, pears, avocado and bananas together, because these fruits <a href="https://www.tandfonline.com/doi/full/10.1080/15538362.2013.748378#:%7E:text=%27Malindi%27%20had%20higher%20respiration%20rates,retention%20in%20fruit%20during%20ripening">release ethylene gas</a> as they ripen, making nearby fruits ripen (and potentially spoil) much faster. That is, unless you <em>do</em> want to ripen your fruits fast.</p> <p>All leafy greens, carrots, cucumbers, cauliflower and broccoli will do best in the low-humidity drawer (crisper) in the fridge. You can put them in perforated plastic bags to retain moisture but maintain air flow. But don’t put them in completely sealed bags because this can slow down ripening while <a href="https://ucanr.edu/sites/hdnmastergardeners/files/338860.pdf">trapping carbon dioxide</a>, leading to decay and bad smells.</p> <p>Some fruits will also do best in the fridge. For example, apples and citrus fruits such as oranges can keep fresh longer in the fridge (crisper drawer), although they can stay at room temperature for short periods. However, don’t store watermelon in the fridge for too long, as it will lose its flavour and deep red colour if kept refrigerated <a href="https://ucanr.edu/sites/hdnmastergardeners/files/338860.pdf">for longer than three days</a>.</p> <p>Most herbs and some leafy vegetables – like celery, spring onions and asparagus – can be kept with stems in water to keep them crisp. Keep them in a well-ventilated area and away from direct sunlight, so they don’t get too warm and wilt.</p> <figure><iframe src="https://www.youtube.com/embed/cHu10C1DAds?wmode=transparent&amp;start=0" width="440" height="260" frameborder="0" allowfullscreen="allowfullscreen"></iframe><figcaption><span class="caption">Experimenting at home is a good way to find the best ways to store your produce.</span></figcaption></figure> <h2>Fight food waste and experiment</h2> <p><strong>Don’t buy too much.</strong> Whenever possible, buy only small amounts so that you don’t need to worry about keeping them fresh. Never buy bruised, wounded or damaged produce if you plan to keep it around for more than a day.</p> <p><strong>“Process” your veggies for storage.</strong> If you do buy a large quantity – maybe a bulk option was on sale – consider turning the produce into something you can keep for longer. For example, banana puree made from really ripe bananas can be <a href="https://www.sciencedirect.com/science/article/abs/pii/S0023643817300853">stored for up to 14 days at 4°C</a>. You can use <a href="https://theconversation.com/frozen-canned-or-fermented-when-you-cant-shop-often-for-fresh-vegetables-what-are-the-best-alternatives-131678">freezing, blanching, fermentation and canning</a> for most vegetables.</p> <p><strong>Consider vacuum sealing.</strong> Vacuum packaging of vegetables and berries can keep them fresh longer, as well. For example, vacuum-sealed beans can keep up to 16 months in the fridge, but will last only about <a href="https://www.vacpac.com.au/vacuum-sealed-life-expectancy-how-long-will-my-vacuum-sealed-products-last">four weeks in the fridge unsealed</a>.</p> <p><strong>Keep track.</strong> Arrange your fridge so you can see the produce easily and use it all before it loses freshness.</p> <p><strong>Experiment with storage hacks.</strong> Social media is full of tips and hacks on how best to store produce. Turn your kitchen into a lab and try out any tips you’re curious about – they might just work. You can even use these experiments as a way to teach your kids about the importance of reducing food waste.</p> <p><strong>Grow some of your own.</strong> This isn’t <a href="https://theconversation.com/growing-your-own-food-and-foraging-can-help-tackle-your-ballooning-grocery-bill-heres-how-216264">feasible for all of us</a>, but you can always try having some herbs in pots so you don’t need to worry about keeping them fresh or using up a giant bunch of mint all at once. <a href="https://theconversation.com/health-check-are-microgreens-better-for-you-than-regular-greens-73950">Growing your own microgreens</a> could be handy, too.<!-- Below is The Conversation's page counter tag. Lots of women try herbs like black cohosh for menopausal symptoms like hot flushes – but does it work?

Most Australian women go through menopause between <a href="https://www.nature.com/articles/nrdp20154">45 and 55</a> years of age, with the average age being 51 years, although some women may be younger.</p> <p>Hot flushes and night sweats are <a href="https://www.nature.com/articles/nrendo.2017.180">typical symptoms</a> of menopause, with vaginal dryness, muscle and joint pains, mood changes and sleep disturbance also commonly reported. Up to <a href="https://pubmed.ncbi.nlm.nih.gov/25706184/">75% of women</a> experience menopausal symptoms, with nearly 30% severely affected.</p> <p>These symptoms can negatively impact day-to-day life and wellbeing. The main therapies available include menopausal hormone therapy (MHT) and non-hormonal prescription therapy. Some women will elect to try complementary and alternative medicines, such as herbal medicines and nutritional supplements. Black cohosh is one of them.</p> <h2>What causes hot flushes</h2> <p>The cause of hormonal hot flushes (also called hot flashes) still isn’t completely understood, but the decline in oestrogen at menopause appears to play a role in a process that involves the <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC3833827/">area of the brain that regulates temperature</a> (the hypothalamus).</p> <p>Factors linked to a greater likelihood of hot flushes include <a href="https://pubmed.ncbi.nlm.nih.gov/19675142/">being overweight or having obesity</a> and <a href="https://pubmed.ncbi.nlm.nih.gov/25706184/">smoking</a>.</p> <p>MHT, previously known as hormone replacement therapy (HRT), usually includes oestrogen and is the <a href="https://pubmed.ncbi.nlm.nih.gov/26444994/">most effective treatment</a> for menopausal symptoms, such as hot flushes. But women may choose complementary and alternative medicines instead – either because they shouldn’t take hormone therapy, for example because they have breast cancer, or because of personal preference.</p> <p>Close <a href="https://pubmed.ncbi.nlm.nih.gov/26224187/">to 40%</a> of Australian women report using complementary and alternative medicines for menopausal symptoms, and up to 20% using them specifically to treat hot flushes and sweats.</p> <h2>A long history</h2> <p>Complementary and alternative medicines have a long history of use in many cultures. Today, their potential benefits for menopausal symptoms are promoted by the companies that make and sell them.</p> <p>The <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6419242/">complementary and alternative medicines</a> women often try for menopausal symptoms include phytoestrogens, wild yam, dong quai, ginseng and black cohosh.</p> <p>Black cohosh (plant name <em>Cimicifuga racemosa</em>) was <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6599854/">traditionally</a> used by Native Americans to treat a variety of health concerns such as sore throat, kidney trouble, musculoskeletal pain and menstrual problems. It is now a popular herbal choice for hot flushes and night sweats, as well as vaginal dryness and mood changes.</p> <p>There are <a href="https://pubmed.ncbi.nlm.nih.gov/37252752/">many theories</a> for how the active ingredients in black cohosh might work in the body, such as acting like oestrogen, or affecting chemical pathways in the brain. But despite extensive research, the <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6599854/">evidence to support these theories remains inconclusive</a>.</p> <p>It is also not clear whether black cohosh is effective for hot flushes. Results from individual studies are mixed, with <a href="https://pubmed.ncbi.nlm.nih.gov/17565936/">some</a> finding black cohosh improves hot flushes, while <a href="https://pubmed.ncbi.nlm.nih.gov/18257142/">others</a> have found it doesn’t.</p> <p>A 2012 <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6599854/">review</a> combined all the results from studies of menopausal women using black cohosh to that date and found overall there was no proof black cohosh reduces hot flushes more effectively than an inactive treatment (placebo). <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6599854/">This review</a> also revealed that many studies did not use rigorous research methods, so the findings are hard to interpret.</p> <p>A more recent <a href="https://pubmed.ncbi.nlm.nih.gov/33021111/">review</a> of clinical trials claimed black cohosh may ease menopausal symptoms, but the included studies were mostly small, less than six months long, and included women with mild symptoms.</p> <p>There is also no meaningful evidence black cohosh helps other symptoms of menopause, such as vaginal symptoms, sexual problems, or poor general wellbeing, or that it protects against bone loss.</p> <p>Evidence for how black cohosh is absorbed and metabolised by the body is also lacking, and it is not known what dose or formulation is best to use.</p> <p>More good quality studies are needed to decide whether black cohosh works for hot flushes and other menopausal symptoms.</p> <h2>Is it safe to try?</h2> <p>A <a href="https://pubmed.ncbi.nlm.nih.gov/33021111/">review of studies</a> suggests black cohosh is safe to use, although many of the studies have not reported possible adverse reactions in detail. Side effects such as gastrointestinal upset and rashes may occur.</p> <p>While there have been <a href="https://www.mja.com.au/journal/2008/188/7/liver-failure-associated-use-black-cohosh-menopausal-symptoms#0_i1091948">rare reports of liver damage</a>, there is <a href="https://pubmed.ncbi.nlm.nih.gov/21228727/">no clear evidence</a> black cohosh was the cause. Even so, in Australia, black cohosh manufacturers and suppliers are required to put a warning label for the potential of harm to the liver on their products.</p> <p>It is recommended black cohosh is not used by women with menopausal symptoms <a href="https://www.canceraustralia.gov.au/cancer-types/breast-cancer/impacted-by-breast-cancer/physical-changes/menopause/treatments-menopausal-symptoms">after breast cancer</a>, as its safety after breast cancer is uncertain. All women should consult with their doctor before using black cohosh if they are taking other medications in case of possible drug interactions.</p> <p>Many women like to try herbal therapies for hot flushes and other menopausal symptoms. While black cohosh is generally considered safe and some women may find it helps them, at the moment there is not enough scientific evidence to show its effects are any better than placebo.</p> <p>Women experiencing troublesome menopausal symptoms, such as hot flushes, should talk to their doctor about the best treatment options for them.<!-- Below is The Conversation's page counter tag. 7 tips to maintain your herb garden

<p>Whether you love to cook with fresh herbs or are just looking to add something new to your garden, starting your own herb garden is very rewarding. To start your garden off the right way, here are seven tips that will help your herb garden flourish.  </p> <p><strong>1. Choose healthy herbs</strong></p> <p>From the get go, when you purchase your herb you need to make sure it is in a healthy condition. Look for bright colours, no bugs, no eggs and plenty of foliage. Sickly looking herbs should be quarantined from all the other herbs to ensure they do not get infested.  </p> <p><strong>2. Select the right environment</strong></p> <p>If you’ve decided you want your herb garden in a certain area, make sure those herbs can live in that kind of lighting and soil condition. Planting rosemary in a humid area will cause it to die within weeks due to wet feet. The herbs that need to be in the sun will become pale and weak if they do not get enough light. If you don’t have a completely sunny or shady area, then plants your herbs in pots and move them accordingly.</p> <p><strong>3. Prune regularly</strong></p> <p>All gardeners know that not pruning is a mistake that will detrimentally hinder the growth of your garden. If you don’t prune your herbs, they will only grow taller on a few stems. Lack of pruning will cause the leaves to age, dry and fall off. Make sure you regularly prune your herbs.</p> <p><strong>4. Don’t overcrowd</strong></p> <p>When you purchase your herb, look at the height and width of the fully-grown plant. Growing too many herbs in the same vicinity will be a waste of time and money as the herbs won’t grow a healthy root system. Without a healthy root system, the herb will struggle to survive and thrive.</p> <p><strong>5. Stop flower growth</strong></p> <p>When herbs grow flowers, it’s a sign that they are at the end of their life cycle. Once you see a flower forming, pinch off the entire thing to stop it from hindering the growth of the herb. If the herb is persistent then cut the entire stem off.</p> <p><strong>6. Fertilise and water</strong></p> <p>Herbs need a water schedule in order for them to grow. Never wash out the leaves; pour the water on the soil. Mulch will assist in locking the moisture into the soil. A fertiliser is also important as it will boost much needed growth due to the herb being harvested multiple times in the growing season.</p> <p><strong>7. Watch what you spray</strong></p> <p>Herbs should never be exposed to chemicals that will be harmful to those eating them. Even if a spray is safe for animal and pets you need to ensure that it says it is safe for edibles. A beginners guide to herb gardening

<p>There’s an indescribable pleasure in sauntering out to your garden to pick freshly grown herbs to throw into your homemade dish. Anyone with an herb gardens would agree herbs from your personal garden gives food that extra oomph even freshly bought herbs don’t bring. What’s better is growing herbs is easy! How to grow herbs will depend on the particular herb you’re growing but here are some general rules to consider:</p> <p><strong>Choose herbs you will use</strong></p> <p>Think about what herbs you use for daily cooking. Popular options that enhance many dishes include oregano, basil, thyme and rosemary.</p> <p><strong>Provide sunshine</strong></p> <p>Most herbs need at least 6 or more hours of sunlight a day. There are some shade-loving exceptions like mint but Mediterranean herbs, such as rosemary, thyme, lavender and oregano, are drought-hardy and thrive in full sun. However, don’t scorch herbs. Place in an undercover area which receives sunlight.</p> <p><strong>Invest in a good sized pot </strong></p> <p>Don’t crowd your seedlings into a small sized pot. Provide room for them to grow and ensure it is deep enough for the roots to grow.</p> <p><strong>Good drainage </strong></p> <p>Herbs do not enjoy consistently damp or wet soil. Place gravel or stones at bottom of the pot to ensure good drainage.</p> <p><strong>Quality soil</strong></p> <p>Without good soil herbs will not grow properly. Supplement the soil with compost to give seedlings a boost.</p> <p><strong>Water moderately </strong></p> <p>During the early stages of growing herbs, you should water well. Once they are grown though, water moderately making sure you don’t over-water or under-water.</p> <p><strong>Wait before harvesting </strong></p> <p>Allow your herbs to grow before you start harvesting them. Wait into they are well and truly established (around twice the size) before plucking.</p> <p><strong>Prune regularly </strong></p> <p>Once your herbs have grown though don’t skimp on the pruning. 14 medicinal herbs you can grow in your backyard

<p><strong>Basil</strong></p> <p>This medicinal herb can help with flatulence, lack of appetite, cuts and scrapes. Harvest the young leaves of this annual plant as needed.</p> <p><strong>Chamomile</strong></p> <p>Use the flower heads of this medicinal herb for infusions and salves to relieve conditions such as indigestion and colic, anxiety and tension, and skin inflammations and irritations.</p> <p><strong>Echinacea</strong></p> <p>If you suffer from a cold or the flu, try this medicinal herb to ease the severity of your symptoms. Even smelling this medicinal herb has been shown to calm and relax. It also eases pain, and when applied to cuts and bruises functions as an antiseptic.</p> <p><strong>Lemon balm</strong></p> <p>A relative of mint, lemon balm is a versatile medicinal herb that helps relieve anxiety, insomnia, wounds, herpes, insect bites, flatulence and an upset stomach.</p> <p><strong>Marigold</strong></p> <p>Good for easing sunburn, acne, and blemishes, this medicinal herb also soothes ulcers and digestive problems.</p> <p><strong>Parsley</strong></p> <p>Don’t think of it as decorative on your plate; this medicinal herb is loaded with nutrients as well as healing powers to help with flatulence and bad breath.</p> <p><strong>Peppermint</strong></p> <p>If you have digestion issues or gas, sipping tea made of this medicinal herb might provide relief. It’s also been shown to help soothe headaches.</p> <p><strong>Rosemary</strong></p> <p>This medicinal herb helps memory and concentration, improves mood – and sweetens breath.</p> <p><strong>Sage</strong></p> <p>Sage’s genus name, Salvia, means “to heal,” reflecting its early use as a medicinal, not culinary, herb. <p dir="ltr">KFC lures in millions of customers per week worldwide, with most people flocking to the fast food chain for the world-famous fried chicken.</p> <p dir="ltr">A popular TV program in the UK called Secrets of the Fast Food Giants has lifted the lid on secrets behind the famous breadcrumb coating that gives KFC’s chicken its famous and distinctive taste. </p> <p dir="ltr">KFC worker Jo said the chain is fiercely protective of the flavouring and only a handful of people know the full recipe.</p> <p dir="ltr">“It’s kept in a vault in Kentucky,” she said.</p> <p dir="ltr">“Across KFC, only two or three people actually know the exact recipe.”</p> <p dir="ltr">“We have two different spice blenders so one factory does half of the blend, and then another does the second half and then packs it.”</p> <p dir="ltr">“So actually not one factory knows the complete recipe.”</p> <p dir="ltr">Jo also shared how the KFC buckets are made of a whole chicken cut into nine pieces.</p> <p dir="ltr">“That allows us to have the perfect ratio of our breading to chicken,” she explained.</p> <p dir="ltr">Meanwhile, popcorn chicken is made from chicken breast and coated in a light seasoning.</p> <p dir="ltr">Additionally, a million and a half pots of gravy are sold at KFC a week, and some diehard fans even put it away for Christmas Day.</p> <p dir="ltr">“This is an original recipe that has come from the fryers, we drain it overnight and then it goes into making our gravy,” according to the KFC employee. </p> <p dir="ltr">“It’s literally as you’d make gravy at home with those meat juices.”</p> <p><span id="docs-internal-guid-c439daf5-7fff-6ade-a7d0-68d56c9b05ff"></span></p> <p dir="ltr">KFC was founded in 1954 and has 24,000 outlets globally.</p> <p dir="ltr"><em>Image: Shutterstock</em></p>

The Kmart hack that keeps herbs fresh for six weeks

<p>A Kmart shopper has revealed how she keeps fresh herbs purchased from the supermarket in her refrigerator for up to six weeks.</p> <p>Posting on Facebook group Kmart Hacks &amp; Decor, Natasha praised the store's 4.5 Litre Fridge Food Saver which promises to keep items like herbs fresher for longer.</p> <p>“I am so in shock with these Kmart fridge containers,” Natasha wrote on the page.</p> <p>“I bought this coriander on January 30 and I have kept it in one of Kmart’s fridge containers and it is yet to go limp or rot.</p> <p>“I kept parsley for over six weeks in one of these containers they are just amazing and such food savers.”</p> <p>Natasha posted a photo of a bunch of coriander from Coles which appeared fresh, and an image of its use by date which reads "best before 4FEB21".</p> <p><img style="width: 500px; height:265.3061224489796px;" src="https://oversixtydev.blob.core.windows.net/media/7839903/screen-shot-2021-02-15-at-21634-pm.png" alt="" data-udi="umb://media/5bfdd073254b426b87ac4badf8fc0f22" /></p> <p>She also commented: “They have saved me money as well, as I am not throwing out bad fruit and vegetables as much”.</p> <p>Other members of the Kmart Hacks &amp; Decor page posted on Facebook about their positive experiences with the Kmart Food Savers, which sell for $9, with a smaller 1.7 litre size going for $7.</p> <p>“We keep our baby spinach in one of these and the length of time it keeps for now is amazing!” one wrote.</p> <p>Another fan said: “Yes, I got some last weekend and I already love them. Going to get a couple more.”</p> <p>While yet another enthusiast revealed they used the container for storing “freshly cooked prawns … perfect over Christmas and kept them fresh for days,” another had a warning.</p> <p>One woman said the container, which includes a removable drainer, was only suitable for cleaning by handwashing.</p> <p>“Hubby ruined mine by putting them in the dishwasher,” she wrote.</p> <p>Another added: “The label says dishwasher safe but they are not dishwasher safe.”</p>

If you don’t have any fresh herbs, add drops of essential oil instead.</p> <p><strong>Ingredients</strong></p> <ul class="no-bullet"> <li>fresh or dried herbs (you can also use herbal tea bags)</li> <li>distilled white vinegar</li> </ul> <p><strong>Preparation</strong></p> <ol> <li>Roughly chop 1 to 2 large handfuls of fresh or dried herbs (such as lemon verbena, peppermint, rosemary, lemon balm or lavender), or place 5 to 10 tea bags in the bottom of a wide-mouthed glass jar.</li> <li>Add vinegar to fill the jar. Replace the lid, leave for a few days to infuse, then strain out the herbs. (If you are using tea bags, you can gently warm the vinegar before pouring to ensure maximum diffusion.)</li> <li>Decant into a plastic spray bottle. This spray is perfectly safe and very effective to use at full-strength, but it can also be diluted half-and-half with water for lighter jobs.</li> </ol> <h4>Eucalyptus floor wash</h4> <p>With its powerful natural antiseptic, disinfectant and cleaning properties, eucalyptus oil can be put to work in every room of the house. This simple solution can be used on both timber and lino floors. When washing a timber floor, remember not to saturate it. Your mop should be damp, not dripping wet, and the floor should be well-swept or vacuumed before mopping.</p> <p><strong>Ingredients</strong></p> <ul class="no-bullet"> <li>1 teaspoon eucalyptus oil</li> <li>2 tablespoons methylated spirits</li> <li>5 litres hot water (about half a bucket)</li> </ul> <p><strong>Preparation</strong></p> <ol> <li>Combine all the ingredients in a bucket.</li> <li>Wring out a mop in the solution and use it to damp mop the floor. 3 hacks to keep your herbs fresher for longer

<p>Herbs are a must-have for any chef who wants to add that little something extra to their favourite dish, but the shelf life of herbs leaves something to be desired.</p> <p>Nutritionist Dr Joanna McMillan knows this pain of bulk buying herbs and hoping for the best, so she’s shared her hacks for keeping herbs fresher for longer with <em><a href="https://au.lifestyle.yahoo.com/hack-forkeeping-herbs-fresher-for-longer-212750312.html">Yahoo Lifestyle AU</a></em>.</p> <p><strong>1. Create a mini greenhouse</strong></p> <p>This hack might sound a bit odd, but if you’re able to create a mini greenhouse, your herbs will stay fresher for longer.</p> <p>McMillan suggests placing the cut stems of your herbs in a small glass of water and covering the whole thing in a plastic bag. Keep the bag sealed up tight with an elastic around the base of the glass.</p> <p>This keeps the humidity high.</p> <p>Simply store the mini greenhouse in your fridge and use the herbs as soon as possible.</p> <p>Another way to do this trick is to sandwich your leftover herbs between two damp piece of paper towel and place the herbs in your fridge crisper drawer.</p> <p><strong>2. Don’t cut the herbs in the first place</strong></p> <p>McMillan recommends avoiding buying bunches of herbs in the first place if you don’t have plans to use all of the herbs at once.</p> <p>Instead, she says you should purchase the tiny pots of herbs that are now stocked in supermarkets. This helps keeping your herbs fresh as you can store them on your windowsill (if you remember to water them to keep the herbs alive) and they’ll be fresh until you’re done using the crop.</p> <p><strong>3. Don’t lose your leftovers</strong></p> <p>Food wastage is an issue at the moment, so another way to ensure that you get the most out of your herbs is to chuck them into your freezer.</p> <p>McMillan suggests that you freeze your leftovers as chopped herbs in a zip lock bag or in little ice cube trays that are filled with olive oil.</p> <p>By keeping them in the ice cube trays, you’re able to use them quickly and whenever you need a flavour boost.</p> <p>By following these hacks, you’re bound to keep your herbs fresher for longer and give your cooking a boost of flavour.</p>

Herb roasted potato wedges

<p>Coated in thyme, oregano and rosemary, these oven-roasted potato wedges will make a delicious addition to any meal.</p> <p><span style="text-decoration: underline;"><strong>Ingredients:</strong> <br /> </span></p> <ul> <li>4 large potatoes, scrubbed and rinsed</li> <li>4 cloves garlic, minced</li> <li>Salt and pepper</li> <li>½ teaspoon rosemary</li> <li>½ teaspoon oregano</li> <li>½ teaspoon thyme</li> <li>3 tablespoon olive oil</li> </ul> <p><span style="text-decoration: underline;"><strong>Method:</strong><br /> </span></p> <ol> <li>Preheat oven to 210°C.</li> <li>Cut potatoes in wedges, according to your preference. Place in bowl.</li> <li>Add olive oil, garlic and herbs. Season well with salt and pepper. Toss ingredients to evenly coat wedges.</li> <li>Spread the potato wedges evenly onto a baking sheet-lined tray. Bake, turning half way, for 30 to 35 minutes or until golden and crispy.  Serve immediately, sprinkled with more salt. Roasted broccolini, kale and chickpeas with herbed ricotta

<p>The beauty of this dish lies in the grilling – don’t be afraid to char the broccoli a little, as it delivers a great flavour. You can serve this as an individual starter, or as a main with grilled ciabatta.</p> <p><strong><span style="text-decoration: underline;">Serves:</span></strong> 4</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <ul> <li>350 g broccolini, stems cut in half lengthways</li> <li>400 g tin chickpeas</li> <li>1 garlic clove, crushed</li> <li>60 ml olive oil, plus extra for drizzling</li> <li>1 bunch Tuscan kale, about 550 to 600 g, cut into 2.5 cm pieces</li> <li>250 g smooth ricotta</li> <li>2 tablespoons finely chopped dill</li> <li>2 tablespoons finely chopped basil</li> <li>1 teaspoon grated lemon zest</li> <li>1 tablespoon lemon juice</li> <li>Pinch of chilli flakes</li> <li>2 teaspoons sea salt</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <ol start="1"> <li>Preheat the oven to 180°C (fan-forced). Preheat the grill (broiler) to medium.</li> <li>In a mixing bowl, toss the broccolini, chickpeas and garlic with 2 tablespoons of the olive oil. Spread the mixture onto a baking tray.</li> <li>In another bowl, toss the kale with the remaining olive oil, then spread over another two baking trays.</li> <li>Place the broccolini mixture under the grill and cook for 4 to 5 minutes, then turn the broccolini over and cook for a further 4 to 5 minutes, until nicely chargrilled. Remove from the heat and set aside to cool.</li> <li>Meanwhile, transfer the kale trays to the oven and bake for 3 to 4 minutes, or until starting to brown, then turn the kale over and bake for a further 2 minutes, or until crisp. Remove from the oven and set aside to cool.</li> <li>In a small bowl, combine the ricotta, dill, basil, lemon zest, lemon juice and chilli flakes. Chicken braised in white wine and herbs

<p>“My mum came on my show Everyday Gourmet to make this quintessential French dish. It was so popular that I had to share it again. It’s brilliant because it’s so simple to make and can either be a fast mid-week dinner for the family (that’s how Mum serves it) or served to impress guests dining at your home,” writes Justine Schofield in her latest cookbook Simple Every Day.</p> <p><strong><span style="text-decoration: underline;">Serves</span>:</strong> 4</p> <p><strong><span style="text-decoration: underline;">Ingredients</span>:</strong></p> <ul> <li>6 tarragon sprigs, plus extra handful of finely chopped leaves to serve</li> <li>2 flat-leaf parsley sprigs, plus extra handful of finely chopped leaves to serve</li> <li>30 g butter</li> <li>1 tablespoon olive oil</li> <li>1 x 1.5 kg chicken, cut into 8 pieces</li> <li>1½ tablespoons cognac (or brandy)</li> <li>2 French shallots, finely chopped</li> <li>150 ml white wine, such as riesling</li> <li>salt flakes and freshly ground black pepper</li> <li>2 egg yolks</li> <li>100 g crème fraiche</li> </ul> <p><strong><span style="text-decoration: underline;">Method</span>:</strong></p> <ol> <li>Preheat the oven to 180°C.</li> <li>Remove the tarragon and parsley leaves from the stalks and finely chop the leaves. Reserve the stalks.</li> <li>Heat the butter and oil in a heavy-based ovenproof sauté pan until foaming. Add the chicken pieces and sauté for 2 minutes on each side until they are golden brown all over. Add the cognac and flambé by igniting with a match and then waiting for the flames to subside. Remove the chicken from the pan and place on a plate.</li> <li>Add the shallot and reserved herb stalks to the pan and stir for 1–2 minutes until the shallot is golden. Pour in the wine and bring to the boil. Return the chicken pieces to the pan and add a good pinch of salt and pepper. Cover with the lid and bake for 35 minutes until the meat falls easily from the bone.</li> <li>Remove the chicken pieces from the pan and place in a warm serving dish. Cover with foil and keep warm. Place the pan over medium heat, bring the pan juices to the boil and cook until reduced by one-quarter. Remove the herb stalks.</li> <li>Mix the egg yolks and crème fraiche until smooth.</li> <li>Remove the pan from the heat and whisk in the egg yolk mixture and chopped herbs until the sauce is smooth and coats the back of a spoon. Adam Liaw’s red beef and vegetable curry with fresh herbs

<p>Celebrity chef Adam Liaw shares his no-fuss red beef and vegetable curry recipe.</p> <p><strong><span style="text-decoration: underline;">Serves:</span></strong> 4</p> <p><strong><span style="text-decoration: underline;">Ingredients</span>:</strong></p> <ul> <li>2 tbsp vegetable oil</li> <li>1 jar Thai Red Curry Paste (195g)</li> <li>1 can Premium Coconut Cream (400ml)</li> <li>1.5L chicken stock or water</li> <li>¼ cup Fish Sauce</li> <li>1 tbsp sugar</li> <li>4 kaffir lime leaves</li> <li>1 eggplant, halved lengthways and sliced</li> <li>1 zucchini, halved lengthways and sliced</li> <li>1 red capsicum, cut into strips</li> <li>1 red onion, cut into chunks</li> <li>8 spears baby corn, halved</li> <li>2 cups button mushrooms, halved</li> <li>1 cup green beans, cut into 5cm lengths</li> <li>2 cups cherry tomatoes</li> <li>1kg beef topside, sliced very thinly</li> <li>1 cup loosely packed basil leaves</li> <li>30ml lime juice (about 1 lime)</li> <li>Coriander leaves, to serve</li> <li>Steamed rice, to serve</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <p>1. Heat the oil in a large pot and fry the curry paste for a few minutes, stirring occasionally until the paste is very fragrant. Add about 100ml of the coconut cream and continue to fry for a further 5 minutes. Add the stock or water and bring to the boil. Add the fish sauce, sugar and lime leaves. Boil for 5-10 minutes until the top of the liquid starts to take on an oily shine.</p> <p>2. Add the vegetables and return to a simmer. Simmer for 5 minutes until the vegetables begin to soften, and add the beef and simmer for a further 10 minutes until the beef is cooked through. Stir through the remaining coconut cream, then stir through the basil leaves and lime juice. Pumpkin soup with serrano ham and herbed rolls

<p>This creamy pumpkin soup mixed with crispy serrano ham and herbed rolls will be the most delicious version of the soup that you have tried yet.</p> <p><strong><span style="text-decoration: underline;">Serves:</span></strong> Two</p> <p><strong><span style="text-decoration: underline;">Ingredients: </span></strong></p> <ul> <li>1 pumpkin</li> <li>1 tbsp olive oil</li> <li>½ brown onion</li> <li>1 clove garlic</li> <li>2 tsp cumin</li> <li>2 cups hot water</li> <li>1 tin cannellini beans</li> <li>4 slices Serrano ham</li> <li>2 bake-at-home herb rolls</li> <li>Handful parsley</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <p>1. Preheat the oven to 200°C/180°C fan-forced. To prepare the ingredients, remove the pumpkin skin and cut the pumpkin into 3 cm pieces. Finely chop the brown onion and parley. Peel and crush the garlic, and drain and rinse the cannellini beans.<br /> <br /> 2. Toss the pumpkin in half of the olive oil and place in a single layer on a lined oven tray. Season with salt and pepper. Cook in the oven for 35 minutes or until tender.<br /> <br /> 3. Meanwhile, heat the remaining olive oil in a large saucepan. Add the brown onion and cook, stirring, for 5 minutes or until soft. Add the garlic and cumin and cook for a further 1 minute or until fragrant. Transfer the roast pumpkin to the saucepan with the hot water. Bring to the boil. Reduce to a simmer and add the cannellini beans.<br /> <br /> 4. Reline the same oven tray with baking paper and place the Serrano ham on the tray in a single layer. Cook in the oven for 5-10 minutes or until crispy. Add the bake-at-home herb rolls in the last 5 minutes until warm and crusty on the outside.<br /> <br /> 5. While the Serrano ham is crisping up in the oven, remove the large saucepan from the heat and, using a stick blender, blend the mixture into a smooth pumpkin and white bean puree. Season to taste with salt and pepper. Tip: You can adjust the consistency by adding extra water.<br /> <br /> 6. To serve, divide the soup between bowls. Top with the parsley and crumble over the Serrano ham.
