Easy-Peasy Porridge with Nutella and Raspberries

<p dir="ltr">Dreading that early morning winter chill? Look no further than this delicious and easy porridge recipe that will transform the way you enjoy a warm bowl of oats!</p> <p dir="ltr">Easy-Peasy Porridge with NUTELLA® and Raspberries</p> <p dir="ltr">Difficulty: ⅓</p> <p dir="ltr"><strong>Time:</strong> 20 minutes</p> <p dir="ltr"><strong>Serves:</strong> 4</p> <p dir="ltr"><strong>Ingredients: </strong></p> <ul> <li dir="ltr" aria-level="1"> <p dir="ltr" role="presentation">4 cups of Oats</p> </li> <li dir="ltr" aria-level="1"> <p dir="ltr" role="presentation">800ml Skim Milk</p> </li> <li dir="ltr" aria-level="1"> <p dir="ltr" role="presentation">40g Sugar</p> </li> </ul> <p dir="ltr"><strong>To Serve: </strong></p> <ul> <li dir="ltr" aria-level="1"> <p dir="ltr" role="presentation">15g (1 tbsp) Nutella® per bowl</p> </li> <li dir="ltr" aria-level="1"> <p dir="ltr" role="presentation">40g roughly-chopped hazelnuts</p> </li> <li dir="ltr" aria-level="1"> <p dir="ltr" role="presentation">Raspberries</p> </li> </ul> <p dir="ltr"><strong>Method:</strong></p> <ol> <li dir="ltr" aria-level="1"> <p dir="ltr" role="presentation">Put the oats and milk in a saucepan. Cook on medium-high heat until the mixture thickens, then add the sugar and keep stirring. Let the porridge cool to room temperature.</p> </li> <li dir="ltr" aria-level="1"> <p dir="ltr" role="presentation">Divide the porridge into 4 bowls and decorate each with 1 tablespoon of Nutella®, chopped hazelnuts and raspberries (or other seasonal fruit if you prefer). </p> </li> <li dir="ltr" aria-level="1"> <p dir="ltr" role="presentation">Serve and enjoy!</p> </li> </ol> <p> </p> <p><em>Image: Supplied</em></p>

Apple and oatmeal cake

<p>This cake makes a lovely dessert served warm and topped with custard. Alternatively, it is a perfect addition to a cup of tea.</p> <p><strong><span style="text-decoration: underline;">Makes:</span></strong> 80</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <ul> <li>200g oats</li> <li>625ml boiling water</li> <li>230g butter</li> <li>100g brown sugar</li> <li>120g castor sugar</li> <li>4 eggs</li> <li>2 teaspoons vanilla bean paste (optional)</li> <li>300g wholemeal self-raising flour</li> <li>160g self-raising flour</li> <li>4g ground cinnamon</li> <li>4g ground nutmeg</li> <li>4 Granny Smith apples (460g flesh grated)</li> <li>200g sultanas</li> <li>60ml extra virgin olive oil</li> <li>200g toasted almonds, very finely chopped</li> </ul> <p><em>Topping</em></p> <ul> <li>100g butter</li> <li>250ml milk</li> <li>55g skim milk powder</li> <li>135g brown sugar</li> <li>75g oats</li> <li>150g finely ground almonds</li> <li>120g desiccated coconut</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <ol> <li>Preheat the oven to 180°C, grease and line a gastro tray with parchment (530mm length x325mm width x 100m depth).</li> <li>Place your oats in a bowl and cover with boiling water, then set aside.</li> <li>Cream your butter and sugar in the kitchen-aid or mixer, until light and pale. Beat in your eggs and vanilla, adding one egg at a time.</li> <li>In a separate bowl combine the flour, cinnamon and nutmeg. In another bowl mix the sultanas, olive oil and chopped nuts.</li> <li>Add the oats to the egg and butter mix. Fold in the flour, sultanas, olive oil and nuts and stir to combine. Pour into the prepared tin.</li> <li>Now for the topping. Place the butter in a medium sized pan to melt. Add the milk and brown sugar, dissolve and bring to the boil.</li> <li>Remove from the heat and mix in the oats, nuts and coconut. Crumble over the top of the raw cake and press in slightly.</li> <li>Place the cake into the preheated oven and bake for 35-45 minutes or until golden and cooked through. Banana oatmeal cups

<p>If you’re looking for a tasty on-the-go snack option, then you can’t go past these quick and healthy banana oatmeal cups.</p> <p><strong><span style="text-decoration: underline;">Ingredients</span>:</strong></p> <ul> <li>4 cups instant oats, or regular oats blended into smaller pieces.</li> <li>1 tablespoon ground cinnamon</li> <li>½ teaspoon ground cloves</li> <li>½ teaspoon salt</li> <li>1 teaspoon baking powder</li> <li>½ cup walnuts, broken up</li> <li>3 very ripe average sized bananas, peeled</li> <li>½ cup apple sauce</li> <li>2 eggs</li> <li>¼ cup maple syrup</li> <li>1 tablespoon vanilla extract</li> </ul> <p><strong><span style="text-decoration: underline;">Method</span>:</strong></p> <ol> <li>Preheat your oven to 180°C. Line the muffin tin.</li> <li>In a bowl mix together the oats, spices, salt, baking powder, and walnuts. In a medium bowl, blend together the bananas, applesauce, eggs, maple, and vanilla until it is smooth.</li> <li>Combine banana mixture with oat mixture, making sure not to over-mix.
